Grain-free Tortilla

Remember a while back I made these Mexican-tortillas ? I made them and put them in the freezer and used them up - but was not crazy about them.

This one is easy and really good and much better tasting. So why do we need to buy tortillas from the store any more??

(makes one 8-inch tortilla)

Ingredients:

1/4 cup egg whites
2 tbsp  almond flour
2 tsp ground flaxseed
1 tsp finely grated Parmesan
Dash of sea salt
optional -** Some garlic powder or Dash of ground chipotle chile or seasoning of choice**

Directions:

Whisk all ingredients together in a small bowl to form a smooth, thin batter.
Lightly spray a 10-inch non-stick skillet with olive oil spray and heat over medium-high heat.
Pour batter into hot skillet, tilting the pan and using a circular motion to evenly distribute the batter in the bottom.
Cook for 1 to 2 minutes until very lightly browned and cooked around edges. Carefully loosen and flip using a rubber spatula; cook for another 1 to 2 minutes.

Serve and fill with your favorite fixings.

*Note: To make 4 tortillas, use the following amounts: 1 cup egg whites/egg substitute, 1/2 cup blanched almond flour, 2 tablespoons plus 2 teaspoon of ground golden flax, 4 teaspoons finely grated Parmesan, 1/4 teaspoon salt and 1/4 teaspoon seasoning (or to taste). Pour approximately 1/4 cup of batter in hot skillet to make each tortilla.

  1. I'm going to try this one, I've looked at the ones with coconut flour, but they tend to not be as sturdy...wish me luck ;-)

  2. Looks good, but I cant try them because of the parmesan cheese....Grrrr! I have no problem going gluten free, but I've tried to add dairy back to my diet and it causes a lot of mucus. Last night I had some of my sons popcorn with butter on it and sneezed 10 times this morning (meaning my allergies come back when I eat dairy.....which translates to inflammation (BAD BAD BAD) in my body! Oh well, at least I look super skinny right now wearing size 4 skinny jeans!

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
