Healthy Waffles

Just made some waffles this morning. They tasted so good - I had to share.
Ingredients:

1/2 C. Ground Flax seed meal
1/2 C. Almond flour
2 tbsp coconut flour
2tbsp chia seeds
1 Tbls. Baking Powder
3 Eggs
3/4 C. of Unsweetened Almond Milk (or more as needed)
20 drops of SweetLeaf Stevia clear drops
1 tsp. Vanilla OR Maple Extract
1 tsp. Cinnamon
1/4 C. Coconut Oil

Directions:

In a large bowl, mix the flax meal and baking powder.
In a small bowl, mix the eggs, and milk.
Add the vanilla, cinnamon and Stevia, whisking well.
Add wet ingredients to the dry and mix in the softened oil/butter.
Scoop about 2-3 Tbls. of the mixture into your waffle iron.

Mine made 4 waffles
for the whole batch;  c/42 - f/33 - s/3
per each waffle;  c/10 - f/8 - s/.05

Serve with Nature's Hollow Syrup, or/and top with a little Homemade Nut butter.
I ate mine 2 with homemade coconut butter and 2 with homemade nut butter and dipped in a little Natures Hollow Maple Syrup - Oh So GOOD!!

  1. These waffles look amazing! I have a question. I hate flax seeds. What would use substitute for them?

    Also, you mentioned that you were only going to blog maybe once a week. I know this is selfish on my part but I loved when you used to tell us what you ate and took pictures. I know it's a ton of work and you certainly don't need to do it for yourself. This being said, I think you helped many, many people when you did this ... absolutely myself included. :) So many people have been unsuccessful not only taking the weight off but keeping it off. You are an anomaly my Dear. I wish you were the norm.

    As always, thanks for all that you do for all of us! You are loved and appreciated far more than you can ever know! :)

    1. I'm not sure you will even taste the difference when they are cooked - but I suppose you can use more almond and coconut flour. Keep in mind: coconut flour is much more dense and you use less and more eggs. But I think they taste good the way they are. :-)

  2. Those look good! I will be sad that you are going only once a week too. I don't know why everyone has disappeared:( There's still a few of us, and I'm not going any where!

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
