Pumpkin-Breakfast-Muffin

Good Morning Friends,

Today is Sunday and it should be beautiful over here, around 90ish still. I hope the weather is nice where you are today and you do something relaxing and fun. Me - I have nothing to do. Hubby is working days still. I am SO tired cause he keeps me up at nights for the past week. Last night I actually said to him in the middle of the night, "I AM gonna kill you if you don't knock it off - I am TIRED!"

I guess its funny cause I am getting used to no sleep. That's terrible I know. I still feel a sore throat and not enough energy after a while in the day, but I force myself to do something around here anyways - no matter what.

My food the past few days;
Friday breakfast was 1 of my muffins but this time I put some cocoa powder in it and ate it with some coconut butter on top with some berries.
 I have a small pyrex bowl that is perfect for making individual muffins - takes 2 minutes in the microwave.
 Lunch Friday was Awesome. I cooked some chorrizo added in some mushrooms and onions and kale and sauted all together, added in 1/2 cup of black beans and a spoon or 2 of basil pesto-alfredo sauce I got at target. YUMMY
 Seriously?? that was 2 days ago and I can't remember what I had for dinner. LOL

Breakfast yesterday was Alpine valley 12 grain toast (w/my homemade almond and coconut butters), eggs and berries.
 Maria had been out of town visiting her friend and then stopped by Vegas to visit my sister and her friends. I picked her up from the airport at 11am, but on the way I stopped at Sprouts frist and got a few things and some gas.

I brought her to the new house so she could see all the progress, but she was too tired to stay so I drove her home to Pasadena. We stopped at this little place and got some lunch to eat at her house. I ate 1 fish taco, 1 chicken strip and a few fries and a few fried zucchini.

Got back home by 4pm I think. I had left the dogs outside this time and they were fine and happy to see me. We really need to get a doggy door installed. That would make me feel safer and happier for them.

We went for a 1.6 mile walk. They could barely make it back. They are getting old I guess.

Dinner was a spinach salad, and some leftover meat-chicken and steak. Just a little of each and a little greens.

Yeah later I wanted desert so I had some rediwhip and a few blueberries and 2 strawberries .

Breakfast this morning was a Pumpkin muffin with my homemade butter and coconut butter on top SO GOOD.
You know when you open a can of Pumpkin Puree to make something and don't know what to do with the rest??

Pumpkin-Breakfast-Muffin
Ingredients:

1 tbsp each of;
coconut oil
coconut flour
almond flour
chia seeds
heaping spoon of pumpkin
1 egg
1/2 tsp baking powder
a little Natures Hollow maple syrup
a little vanilla extract
a little each; cinnamon, nutmeg, allspice and ground cloves ( I forget some pumpkin pie spice)
and a few crushed walnuts.

mix the liquid ingredients first then add the dry. Mix WELL
2 minutes in the microwave.

This is so good - If I was to guess - I think it has 2/1

I just might make it again tomorrow.

  2. Even if you aren't sleeping, it seems you are getting a lot done? When I think of driving in CA, it seems a trip to the airport would be an all day ordeal because of traffic?

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
