My food has been a hit lately...

Hello Friends,

I noticed that a lot of you are dwindling off the blogs and maybe even dieting - or "Eating Healthy". Those of us that do blog do it to keep in touch with others with the same interests and share what we learn along our Healthy journeys. If you are reading, pop by all the blogs and leave a little comment. Let us know if what we write about helps or not. What would you like to read that might help you reach your goal?

Well lets see - what I have been eating the past 2 days. Remember I made that Turnover and ate it saturday morning for breakfast.
 Lunch was kind of small, 1/2 avocado, little bit of cottage cheese and 2 Cauliflower-cheese-jalapeno-muffins. Iwas feeling kind of useless and bored and just laid in bed watching TV for about 4 hours Saturday. I did get up to take the girls for a walk and make dinner and thats about it.
 Dinner was fried zucchini, chicken and mashed cauli-taters
 Breakfast Sunday was toast with my homemade almond butter, eggs with spinach, mushrooms and cheese, 1/2 avocado and berries
 I have been alone so much lately and was getting depressed so I went to the movies by myself and saw the Last Exorcism. The commercials for upcoming scary movies were much scarier to me than the movie itself. I brought 2 cauliflower-cheese muffins in a baggie in my purse to eat and had some popcorn.

It was still early so I snuck into that cartoon movie Escape From Planet Earth.

 I got home took the girls for a walk then decided to make some of that Chorrizo-Kale spicy soup for dinner, with some wine.
 I also decided to make us a turnover to split for desert.
 It tasted better with the mountain berry Natures Hollow than the apricot. I added a bit more butter and it did not crack as much.
Finished fresh out of the oven. BTW Hubby LOVED the soup and the turnover both. Surprise huh?
 Breakfast this morning was 2 small homemade corn tortillas with chia seeds inside and eggs and berries. I put 1 tbsp of chia seeds in the bowl first with some warm water to let them soak a bit first before I added in the masa flour 1/4c then a bit more warm water until it gets to the right doughy consistency. Then smush - then grill. Easy - Peasy!!
Last week while Hubby and I were out that day looking for dishes we ran across this big store that reminded me of a Pier One Imports and got this tortilla smusher for only $7.99. It worked like a dream - I put plastic wrap on both sides so it would not stick.
I wasn't sure how well it would work but it does. It's made out of a hard plastic.

 Much easier than trying to do it with a rolling pin. I might try that for the next turn over I make too.
 Well I hope your day goes better than mine have been lately.

    1. Well I think its actually called a Tortilla Press - but it looks like a SMUSHER to me.

    2. I think there is a gadget for just about everything! And I'll bet it would work for your turnover. You could then probably crimp your edges with a fork.

  2. I like Dana's idea of using the torilla smasher for the Danish! Great idea and the turnover looks great! I wish I wasn't so rushed all of the time so I could make the yummy food you make....Soup looks really good too. Anyhow, go for your walk in this great weather. The sun improves mood as does the exercise ;)

    1. Carey - It was Rosalie's idea to use it for the turnover...I was just agreeing with her. And I'm with you...if I wasn't rushing around I would have time to make the protein bites, cheesecakes, and more.

  4. I really have to try that soup, it looks SO good. Your meals look skimpier than usual. Are you keeping them small on purpose or is it just my imagination. I ask because I am really trying to cut down my food intake lately and I have to admit to being a bit hungry.

    1. Oh I'm sure I had snacks - I usually have 1 sweet snack every day, but can't remember cause - you know - I got Middle Heimers. LOL

  5. It's 9:30 and I just got back from my brothers. I didn't have dinner because I had a big breakfast and big lunch and I got home so late, I didn't think it was a good idea to eat. But reading your post and looking at all your good meals makes me so HUNGRY!!! I love that you keep trying things and coming up with new ideas. I'm trying to make time to try some new things too. Not always easy because time is what I'm short of. Isn't it funny that we either have too much or not enough time. Why no happy middle?? XO!!

  6. Foods looking good! I'm surprised you went to another scary movie when you got the heck scared out of you last week? I don't know how you manage to sneak to another movie, our people stand there and watch everyone that walks by. Good job on getting out and about!

  7. I found the masa flour at our Kroger around the corner, it was half the price of Whole Foods, so glad I waited. I made some "creamy" chicken soup with coconut milk(I use it all the time now!) and corn tortilla's! It was so good! I love the corn tortilla's Rosalie! I used a rolling pin but I think I'm going to look for a tortilla press like yours! They will become a staple in our house from now on! My honey loved them too! Thanks for the inspiration Rosalie!

  9. I agree it does seem that many have fallen off the healthy eating and blogging bandwagon, sometimes it feels that we have to constantly fight the sugary carby foods all around us and sometimes it feels easier just to let them win.

    What flavors of the stevia drops have you tried and liked? I was looking at them the other day and at $14.99 a piece I'm not sure what to try first.

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
