2 cups finely riced (shredded), raw cauliflower
2 Tbl minced jalapeno
2 eggs, beaten
2 Tbl melted butter
1/3 cup grated parmesan cheese
1 cup grated mozzarella cheese
1 cup grated cheddar cheese **( I used what I had-colby-jack) and you don't really need 2 cups of cheese- 1 cup of any kind mixed will do***
1 Tbl dried onion flakes or powder
1/4 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1/2 tsp baking powder
*a little red pepper
1/4 cup coconut flour
Combine the cauliflower, jalapeno, eggs, add melted butter in a medium bowl.
Add the grated cheeses and mix well.
Stir in the onion flakes, salt, pepper, garlic powder, baking powder and coconut flour until thoroughly combined.
Divide the batter evenly between 12 greased muffin cups.
Bake in preheated 375 degree (F) oven for 25-30 minutes or until golden brown.
Turn off the oven and leave the muffins inside for one hour to firm up. ** I don't know why you would want to do this, because after 25 minutes mine were golden brown and delicious.
Remove and serve warm or cold.
Makes 12 muffins
2 carbs, 1 sugar each

ReplyDeleteI finally made these and were sooo yummy...the whole house smelled yummy..my question tho with all that cheese how much fat and cals is in there cuz im watching the fat too carole
ReplyDeleteCarole if you only use like 1 cup or even 2 of cheese that's not really that much. Divide that up by 12 muffins. And sorry I really don't know how much fat and calories - I never count that. But these are healthy and delish!!
