Just another manic Monday..

Everyone woke up pretty cranky today and it was really hard to get started.

I am having a really hard time finding balance in my life.  I work full time, have two kids in school (double the homework fun), try really hard everyday to eat well (Rosalie has me beat in that department), and started to exercise a few days a week.   I used to be an avid crafter and now it seems like I just don't have the time to craft like I used to.

Anyway, here is what I ate today:
Breakfast was one egg and a piece of Oasis toast with Almond Butter:




Lunch was a couple of pieces of deli meat and slices of cheese- nothing spectacular.  Now for my masterpiece- Veggie lasagna-without noodles (s/c  2/1) per serving:



Low sugar red sauce, zucchini, yellow squash, ricotta cheese, parmesan cheese, and mozzarella cheese.

Gotta run, my lasagna is calling...

  1. OK, now I've got the "Manic Monday" song floating around in my head, LOL! I agree that finding balance in life is hard to do sometimes! Your food looks good.

  2. that looks awesome! btw, i am down 17.5lbs on week 3! still going strong! we are off tomorrow on vacation, i think that could be the test of if i can maintain this as a lifestyle. staying at home its easy, on the road could be different, but i am gonna grab some cottage cheese when we get there so breakfast will be covered. its my favorite, cottage cheese with walnuts and truvia. i think i have had it every day except for 1! happy BFCing all!

  3. oh, sorry for the double post, but i happen to have a crafty blog if you are interested. i totally know where you are coming from on the balance thing. pretty easy now that my kids are grown and i am retired/disabled. but at one point i was working full-time, in college full-time, in ROTC, in the national guard, and raising my kids as a single parent. going on active duty in the army was almost a break! hang in there and it will come!

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
