Just an update of what I have been eating

Hello my friends,

Just a quick post of what I have been eating.

Thursday I ate:
breakfast; turkey bacon, berries, sauted mushrooms and 1/2 slice of onion, baby spinach, cheese, and 1 egg scrambled together, cinnamon coconut bread.

lunch; carb chopper wheat tortilla, spicy cheese, baby spinach, and a turkey patty crumbled in a pan and cooked with little bit of onion, chili powder, cumin and poured over the other stuff in the tortilla and some horse raddish sauce on top. It was tasty.

This afternoon I made some cauliflower crusts for pizzas, I split 2 batches into 4 crusts. Then I made some  chocolate-maple-walnut coconut bread. This time I made them into 12 muffins. I baked them for about 22 minutes.

dinner; I made a cauliflower crust pizza w/seeds of change pasta sauce, cheese, turkey pepperoni.
and for desert I had some chocolate-maple-walnut coconut bread w/some chocolate redi whip on top. It was very good that way by the way.

Then the girls and I went for our daily walk. Around 5pm they were circling around me and smiling and I had to keep telling them we had to wait until 7 because it was so hot today. But do they ever listen?? No - they just kept bugging me. Ha - they are so cute sometimes.

Friday morning here and I just made the coconut flour pancakes again. This time it was much better:

1 Cup unsweetened Almond Milk

4 Eggs

1 tsp Vanilla Extract
1/2 Cup Coconut Flour
1/2 tsp Baking Powder
a glob of butter in the batter
I put 5 blueberries in each pancake.

It made 7 good size pancakes and I couldn't help it  - I ate 3 and hubby ate the other 4. I put butter on top and Natures Hollow, but hubby put redi whip on top too. And I ate 2 turkey bacon and of course coffee.  It might have been S-3/C-1

I also found a recipe for Zuchinni and cheese coconut flour bread. I will try it this weekend and post the recipe if it turns out Fabulous!! Like I hope it will. In this recipe she says she used 1 tbsp of apple cider vinegar to help with dry problem. We shall see...

  2. That's a coincidence I made the cauliflower pizza again tonight too! Delicious! Also waiting to hear about the zucchini bread. Sounds like a savory version of our favorite coconut bread. yum!

  3. It all sounds wonderful! Yes, please let us know how it turns out. I made some zucchini bread the other day and wasn't real happy with it. I ate it anyway, but wasn't feeling the love.

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
