How is everyone doing this weekend? Yesterday Hubby and I went to the movies again. He always wants to go and see 2 cause he says it costs too much money and he feels like it is wasted if we only see 1 like we pay for. LOL.
So I just go along with it for him, it would be fine for me to just see 1. We saw Footlose first. I have to say I was so very disappointed big time. It was exactly like the original. What they said, what they wore. There was nothing different at all! I loved the original with Kevin Bacon.
Next we snuck into Real Steel, with Hugh Jackman. The one where the robots fight. I thought it was great! All the excitement of boxing w/o having to see the blood and violence. And Yeah I had popcorn.
Yesterday I made some spinach bread - on my recipe page.
And I made coconut pancakes for breakfast again this morning. I ate them w/cream cheese and natures hollow on top w/turkey bacon and some berries. Very good!
Lunch I had a spinach salad w/shredded beef, cheese, artichokes, a spoon of Fage yogurt (no sour cream), and I put some Kraft horseraddish sauce on top.
Gives it a little zing.
This afternoon I made the Zuchinni and cheese coconut flour bread. I have to say it was VERY GOOD!! I just ate it plain and warm.
For all of you coconut flour lovers, I have found that by putting 2 tsp of baking pwdr and 1 tbsp of Braggs apple cider vinegar in the bread makes it come out much better. BTW.
I lined the whole pan with parchment paper. It came out so easy that way. |
I have to say that I am really loving the coconut flour recipes. All of them. I know you have heard me say that I really need to eat at least 1-2 grain carbs a day to feel good. Coconut flour is not a grain but when I eat it - it feels like it is to me. It is filling and can be made in so many different ways.
Tomorrow I am gonna make the pizza recipe Jorge posted using Almond flour. Of you don't have the recipe I will post after I make it and tell you if it's good first.

Hey Rosie! The zuchinni bread looks great! Thanks for being the first to try it out! I did make the pizza that Jorge posted about, with the almond flour, and I wasn't really impressed with it! Actually, I was downright disappointed. I'm not a great cook (horrible, actually) so maybe I did it wrong, but I much prefer using the Sara Lee Pita's for the crust of the pizza. I still haven't made the cauliflower crust and need to do that, but I don't have a food processor. Do you think if I blended (instead of shredding) the steamed cauliflower in a blender, it would work?

We have not seen a movie in awhile but I am wanting to see 50/50 have you seen that one yet? I made the Chocolate coconut bread today and cant wait to try that one today. I am so happy that you, Amber and Dawn like to cook and try different recipes for us to try. I hate to cook but if I know it is easy and good I am game. Thanks for sharing.

ReplyDeleteLove that parchment paper idea! I've used wax paper on the bottom, but I usually just use my silicon bakeware to get away from the problem.
I'll have to try the baking powder and apple cider trick. Sounds promising.
I have it on my list to try out that pizza crust, too. I'm not sure. it doesn't seem like it would hold together. Guess we'll see!

ReplyDeleteto shred the cauliflower - just use a cheese shredder if you don't have a food processor. :-)
I love the coconut flour too, it helps me stay satisfied. Thanks for the tip about adding some apple cider vin to help with the dryness. Have a wonderful day :)
ReplyDeleteI have to say, I made my first loaf of coconut bread. I added the walnuts and cinnamon. It seemed very thick, but put it in the pan and baked it. OMG! It is soooo good!

The bread looks great! I agree that the coconut flour seems too good to be true. But I really find the FT makes me look at food differently and search for alternatives. Let me know if you make the pumpkin muffins or not. I changed the recipe a little from what I emailed you. They are really moist.
ReplyDeleteI will do my second coconut bread tomorrow. I don't like coconut and want to "hide" the taste. Do you think cinamon will help with that? Or maybe cream cheese. Any ideas anyone? I have always hated store-bought oatmeal cookies because most have that "coconut" taste. I haven't heard anyone disliking coconut on these blogs. What to do if you don't like the taste and want to hide it?
ReplyDeleteLinda I hate the taste of processed coconut. The coconut flour tastes different and not quite like coconut. Try the cinnamon or chocolate or lemon. Look on the recipe tab, I put what I liked with each flavor :-)
