Pizza Muffins

Ingredients:

1/2 Cup Coconut Flour (sifted)
1 tsp Baking Powder
pinch of Salt
1/2 Cup Butter or Coconut Oil melted (I sill probably use the oil)
4 Eggs
3/4 Cup unsweetened almond milk
1/2 Cup (or more) Chopped Pepperoni Slices (or other meat pizza topping like sausage)
1/2 Cup (or more) Shredded Mozzarella

How To:
Mix together the oil, eggs and milk.
Sift together the Coconut Flour, salt and baking powder into the wet ingredients.
Fold in the pepperoni and cheese.
Pour into greased muffin tins (no need for liner).
They will rise a little, but not much, so fill accordingly.
As you can see my batch made 11

You could take a teaspoon or some of low sugar pasta sauce and at this point tuck it into the top of the muffin. Or leave the sauce for dipping later.
Bake at 400 degrees for 20 minutes.

Just wanted to say hi and let you know i am here, lol, Got a question about the pizza muffins. how many carbs and sugars are in these...they look yummy and wondered how many i could eat..lol

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
