Ingredients:
1/4 c Almond flour
1/4 c ground Flaxseed
1 tbsp chia seeds
1 tsp cinnamon
1 tsp pumpkin pie spice
1 tsp baking powder
1 tsp vanilla extract
12 drops of Sweetleaf stevia clear drops
1/4 c pumpkin puree
2 eggs
1/4 c coconut oil
1/4 c unsweetened vanilla Almond milk - or enough to make it the right consistency
Directions:
Mix all dry ingredients first in a bowl then add the rest and mix well.
Cook in your waffle maker according to directions.
This batch made 3 waffles. This was my first time EVER making waffles, yup in my LIFE!! It was super easy but they did not come out real crispy like when you buy eggos or something. Probably because of the healthy flours, or the pumpkin, or I didn't leave it in long enough. I took it out when the light turned green, maybe longer would help that.
I have 2 left and I saw somewhere that you can make these ahead of time and store them in baggies in the freezer for a quick breakfast. That's what I will do.
I ate mind with some berries and dipped it in some Natures Hollow Maple syrup.

Some tips if you are having trouble
- First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
- Track all of your sugar/carbs. Add everything from your meal together and count them that way.
- Try to stop eating whole grain carbs after 3pm.
- Make sure you drink lots of water.
- Count everything that you put into your mouth. Even sauces - everything , check labels.
- Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
- Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
- Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.

Years ago I made waffles for the kids all the time. You can freeze them. Make sue all the steam is done coming out and then they might be crispier. I had it down to a science but it took some practice. I forget now!

ReplyDeleteJust made these. They were great! I have a Belgium maker so I got two waffles out of it. I like that its crispy on outside but moist inside. My biggest complaint about using alternative flours is how dry the recipes turnout. The pumpkin makes them moist!
