HI Everyone,
I saw a recipe on Facebook for these and tweaked it a bit and finally made them today for lunch. The batch made 4 and they were so good I wanted to eat all of them, but restrained and only ate 2.
Ingredients;
1 zucchini - shredded
a few mushrooms and about 1/4 of a yellow onion shredded
some garlic
1 egg
1/2 cup of shredded cheese - I used mozzarella and parmesan
some bread crumbs - I used 1 slice of my healthy bread and put in the toaster oven - then crumbled it
italian spices - and red pepper (of course)
some turkey sausage crumbles
Directions;
Mix all ingredients together and form 4 patties on a cookie sheet on some parchment paper.
Bake in oven at 425 for 20-25 minutes until brown. If its not brown enough on top put under broiler for 5 minutes.
Serve with a dollop of sour cream on top. ENJOY :-)

Some tips if you are having trouble
- First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
- Track all of your sugar/carbs. Add everything from your meal together and count them that way.
- Try to stop eating whole grain carbs after 3pm.
- Make sure you drink lots of water.
- Count everything that you put into your mouth. Even sauces - everything , check labels.
- Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
- Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
- Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
I hope this helps.

Thank you so much. I have some zucchini in the fridge that needs to be used. I'm making these for lunch!!! I just made baked eggs for breakfast. Here's the linkhttp://whatscookingamerica.net/Eggs/BakedEgg.htm .Had them in New York City this weekend over kale, and they were delicious. So easy to make too. I'm going to post on my blog later about them. Anyway, I bet they would be good over these fritters!!! Hope you are well. I've been reading your posts, but kind of hard to reply on my phone and I've been away for a few days. Hope your short sale goes through, and glad that Maria is doing OK. XO!!
ReplyDeleteThose look good Rosalie! I'm saving the recipe!
