Chorizo and Kale soup and Homemade corn tortillas...

Good Morning Friends,.

Yesterday the rain stopped and in the afternoon went for a walk with the furry girls. So on my walk I saw a guy at the bus stop rolllin up a joint - just as sweet as you please, and in the morning Hubby saw 2 homeless guys coming out of the bushes where they had been sleeping outside of the gates where we live. Nice.

I made this Chorizo and Kale soup last night for dinner. I added some mushrooms and a little almond milk instead of coconut milk, and 1 cut up tomato and less onions.
This is SO GOOD and a bit spicy...
I made a small pot so I had half last night and the other bowl for today.


 For desert last night i had a few protein bites and rediwhip.

I got zero sleep last night. I just tossed and turned so much that at 1am I turned on the TV and watched some shows I had DVR'd for at least 3 hours.

This morning I made 2 homemade corn tortillas for breakfast. I added in 1tbsp of chia seeds so I would get some extra fiber. It was super easy.
Just put the chia seeds in a bowl with some warm water and let sit for a few minutes. Stir - let sit a few min more, add 1/4 c of the Masa flour in a bowl with the chia seeds. Add in some more warm water until it gets the right consistency and form 2 balls and flatten between plastic wrap.
Or use a tortilla Smusher like I got at a specialty store. Works great!
 Use plastic wrap on both sides before smushing.

 Grill on a pan (no oil) medium heat for about 1 minute or more on each side. Done!!
 They taste real good and fresh and much better than the store bought kind. I Love the taste of corn tortillas way better than flour or wheat.
This is the kind of Masa flour I was told to buy. I got it at Wal-Mart, very cheap.
 To make 1 serving =2 tortillas, is 1/4 c of flour= 110 calories, 23 carbs, 2 fiber, 1 sugar and 3 protein.
 It tells you how to do it right on the package.
Sexy Hubby going to drive for the Grammy's today. He left straight for the F.D. of working the night shift.

  1. Wow your hubby is so lucky to see all of those stars tonight. I tried to make tortillas with a recipe that used coconut flour and they did not turn out. Will have to try yours. I have not been doing good lately kind of half eating bfc and not tracking. Trying to get back on track. I need to exercise too but it is so cold here in VA. I will do so much better when it is spring. I love reading your posts, they do keep me going.

    PS-- The little shit....I mean surfer boy next door just lights up his weed on the front patioin plain day (nice example for my kids) and we have a ton of homeless in NB...In this economy the homeless are in abundance, unfortunately.

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
