Chocolate scones...

Good Morning Friends,

 Well yesterday was not much going on. The furry girls and I got in a 1.75 mile walk. It was a nice but a little cool day.
My breakfast yesterday was 2 of the Cauliflower-cheese-jalapeno-muffins, 2 eggs, 1/4 avocado, turkey bacon and a few blackberries.
 My lunch was 2 Oasis toast with my homemade peanut butter and Nature's Hollow preserves. Kay and I decided we are both going to Food Hell cause we eat bread, LOL
Can I tell you how much I LOVE making my own nut butters now. I rebelled against it in the beginning cause I did not understand that even though the nuts have sugar and carbs in them that it is SO much healthier and fun to make it yourself. Only a couple ingredients VS the store bought kinds.
So now I really enjoy making different flavors. So far I have made almond, hazelnut and peanut butters with my food processor. http://purplerosy.blogspot.com/2012/08/homemade-chocolate-hazelnut-butter.html

Last night I just ate some buffalo hot wings and a salad made with that greens mixture I bought at Sams club with baby spinach, swiss chard and kale. I sure hope they have that one again when I go back today.

Desert was 3 protein bites ( I made them super small this time) and some rediwhip. Then later I made some creamy turmeric tea to drink in bed before I went to sleep.

Hubby and his friends did not like them because they do have the texture of a scone, kind of dry and crumbly. I like them and it reminds me of a real scone that I can never have anymore.

So here we go I made them this morning with some cocoa powder inside and used my homemade chocolate-hazelnut butter on top. I loved it.
They should have (I'm gonna guess now) - 10 c / 2 sugars each this way.
I wound up eating 2 of them with some turkey bacon and blackberries for my breakfast this morning.
Hubby is off work today so I have no idea what the day will bring when he wakes up.

So yesterday I got a FABULOUS reaction and many comments. Now why can't it be that way with every post???? HMMM???

  1. I'm sorry I did not leave a comment on your last few posts. I did one time, but since I wasn't signed into google, the post was gone after I signed in and I was too lazy to retype it. I am so proud of you for losing the weight and KEEPING it off. I'm sorry I didn't say that sooner. I always talk about you and what you are making and all your great recipes. I really appreciate the time you put in for all of us. I was just about to make your chocolate protein bites, but realized I don't have any protein powder. I am really trying to make some of these recipes that I constantly print out and then put in the folder!! I think it will really help me to have these things to go to. Still up a few pound, so my goal really seems far away right now. I for one think the carbs, really bread carbs make me want more bread. Even my ezekial and flax seed breads seem to make me want more. I'm trying to stay away for awhile until I can get back in better control. Sending hugs and love from me to you!! XO

    Random question for you. Do you know if you can substitute some other sweetener for the Xylitol in the protein bites and the cheesecake muffins. I have powdered stevia. Will it work?

    1. Go ahead and try it Dana, but remember that stevia tastes a bit different then the xylitol. Xylitol measures like regular sugar so use the stevia conversion chart below and taste with your finger.

    2. I would say it depends if you like stevia. Too much of it can become "bitter" tasting to some people. I use a mixture of Swerve and stevia in mine now (used to use xylitol and stevia). Both work great - Swerve is also different than xylitol.

  4. I don't think there is a food "hell" ... lol! We had freezing rain here today and everything is covered in a sheet of ice - no walks for me. Haven't made my own nut butters ... tried a "nutella" once and hated it. I used to love scones with clotted cream and jam - funny thing is I always thought the cream was the worst part ... how times have changed :)

  5. You and Kay crack me up.....Food Hell! Hahahaha! So did you get to Sprouts for those Zevia's? I just got the regular cola flavor because the Orange and Grape have 7 carbs and I thought the cola had 4 carbs, but it has 7....oh well. If you ever get down to Mother's Market again, they have an awesome selection of Zevia....I love the cola/lime, the cherry cola and the strawberry (all only have 4 carbs). Also, bought some of the low carb flax Oasis bread....guess I'm going to Carb Hell too...hehe
    Looks like the weather will warm up a bit on Thursday...Yay! Have a good one!

  9. Did ya get Maria to try Zevia?? Hubby and I have been adding a few drops of stevia to seltzer water. I haven't bought Zero Waters in a few months now.

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
