Love to you all...

Hello Everyone,

Sorry I haven't posted like my usual every day. You know how it is at this time of year and the fact that hubby's has been home bugging me from Friday until this coming Thursday doesn't help either. LOL

I will start with my food;
breakfast yesterday; Almond flour pancakes, turkey bacon, berries, unsweetened almond breeze.

Today; carb chopper wheat tortilla w/cheese, 1/2 avocado, eggs w/onion, mushroom, turkey sausage crumbles, baby spinach and cheese.
Lunch; yesterday; spinach salad w/tuna, bacon bits, feta cheese, 
today; 1/2 zucchini and 2 celery sticks cut up, tuna, bacon bits, feta and shredded cheddar cheese and mayo on a bowl. Yum.

dinner yesterday; spinach salad and buffalo wings. 
and a lemon muffin w/cream cheese and  natures hollow on top.
desert











today we finally went to the movies and saw Shurlock Holmes. I ate a bunch of popcorn, or at least it seemed that way.

right now I am whipping up some cauliflower patties. I put 1 cup of cauliflower shredded, 1 egg, some cheddar and parmesean cheese, garlic, and some cut up jalapenos. I love cauliflower. once it is shredded its easy to make pizza or stuff with.

I finally found the secret to making the bottom of the crust brown. cook in the oven at 400 degrees on Parchment paper on top of a cookie sheet. the parchment paper makes it brown on the bottom. Once its done just let it cool for a few minutes and then you can actually pick it up. 
OK done - Doesn't that look good? UMM-UMM good with the jalapenos inside.
I finally finished the black scarf yesterday and started another one.

This is that black year with a shimmer in it and I bedazzled the middle of the flowers.
I think my hormones have been playing a joke on me the past week or so. Everything has been getting to me. I cry at a drop of a hat. I feel like I'm loosing my mind a few times. I'm OK but I feel weird. I still get my monthly and that is probably it, cause it's gonna visit tomorrow I think.

Well I gotta go crochet some more. I love you all and really appreciate all the friendship and support. Thanks for listening and REMEMBER - WWRD??

  3. Thinking of you Rosalie. I need my time alone, so I know how you're feeling with the hubby around so much. Quadruple that, and you get an idea of the testosterone level in this house!! Even my three dogs are boys!! I know it's a crazy time of the year, but I am thinking of you and hope we can have a long chat after the holidays. Big hugs from me to you. Keep on crocheting. You are doing a great job! Maybe you can make something for the pups next!! LOL! Little doggy sweaters for your walks. XO

  4. I use my silpat for the cauliflower crust and it works the same way. Love my silpat! And i love that scarf - very sparkly!! Merry Christmas!!

  5. As Mayra said, Hormones, Holidays,and Husbands.....now that's an annoying week (that was my week last week and it didn't go over too well) LOL! Atleast next week is a new week :) Thanks for the input about the cauliflower crusts and the parchment paper. I will try that......once I get the beano! Hahaha!

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
