Yesterday I realized after the day was over that I didn't eat any grains at all.
For breakfast; 2 eggs w/ mushrooms, a little bit onion, baby spinach, cheese, scrambled together w/cottage cheese, 1/2 avocado, 1 lemon muffin, and a few berries.
Lunch; a spinach salad w/tuna, feta cheese, bacon bits, 1/2 zucchini cut up, mayo and a few croutons.
I had planned to have 2 muffins after but I rand errands and got to busy and forgot. Then the next thing I knew it was almost dinner. I got some stuff to make the pumpkin chili that I saw online and on Amber's blog.
Last week I told my hubby about the pumpkin chili and he said YUCK! Not for me! I mentioned it to Amber and she said "just make it and don't tell him". So last night he had to work so I made it for me. I also steamed a head of cauliflower and riced it in my food processor and put it in a bowl in the fridge for later.
So I ate the chili over 1/2 cup of the riced cauliflower. Because I didn't eat that much all afternoon - I was hungry after. I am not used to eating tomatoes that much any more cause of the sugar. I only used a small can of diced tomatoes and the pumpkin, maybe 1/3 cup. It was a bit sweet for me of what I am used to any more, but I like it.
So this morning I had 1/2 cup of the riced cauliflower in a bowl w/ 1/2 avocado cut up and 2 scrambled eggs w/ cheese on top. w/a lemon muffin and a few berries on the side. It was a good breakfast.
Then Hubby cam home very tired and looking in the fridge and sees the container w/the chili. He gets excited and says "did you make spaghetti?" I said no chili, it goes over the riced cauliflower I made. He says can I have some? I say- for breakfast? Yeah he says, so I made him a bowl and warmed it up.
He had to put some spicy BBQ sauce on top - cause he puts that or catsup on everything. He Loved it!! Half way thru I said " do you want to know what I put in there now?" So he stops eating and says OK-what? I told him the pumpkin - and he looks at me and says - "well its a vegetable".
I said why do you keep fighting me to try all this stuff I am making? You never want to try it - but then you love it?? He says - from now on just give it to me and don't tell me. HAHA like that's gonna work. He's like a kid.
He told me that the guys at work want to know if I'm gonna make a healthy cook book with all the stuff I make. They are funny. This blog is my book. and it would be different if I actually thought up all this stuff myself.
We are a TEAM. We share all our thoughts and ideas and that's how we succeed at this, by sharing.
Dawn and I are muffin twins, Who else wants to be our muffin twin?? haha

Haha! I love that you tricked the hubby! I made the pumpkin chili (with beans and no tomatoes)last night, too and tricked my kids. They have no idea that pumpkin is even in it. Happy Halloween!

Hey muffin twin!! My hubby says the same thing - just don't tell me what's in it. LOL - it doesn't work, b/c he always can tell something is different! Happy halloween!
ReplyDeleteI'm a muffin twin...or triplet! I made that chili on the night of our little snowstorm. It was great. But I didn't put in tomatoes. Was that in the recipe? I swear my brain is mush these days! Hugs from me to you!

ReplyDeleteI thought that chili was awesome! I like mine spicy and for some reason it is always better the next day! So glad he liked it, after I had it, I would never have guessed it had pumpkin either!
ReplyDeleteI didn't see the pumpkin chile recipe, but it looks like everyone loves it!! My question is why put pumpkin in chili at all when we can already make it BFC friendly? About the husbands, I think I will start telling my husband there is something he doesn't like in the recipe just so there will be something left for me, lol!
