CheeseCake Muffins...

Hi Everyone,

Well its been real H-O-T over here, over 100 the past 3 days and today was so HUMID! Hubby is always saying " It's so humid outside" And I tell him no its not - you don't know what Humid is. I grew up in Michigan and him in California. But today it WAS!!

So we finally got the approval.
I keep seeing posts on Facebook where people don't want to hear about what you have or what you are doing or not to brag or what you just bought when they are having a hard time financially.  I don't want to make anyone feel bad by saying stuff if they are having a hard time right now - but boy I am glad it looks like it might close by the end of this month.

So that means I better start packing more stuff soon. I don't want to be overwhelmed at the last moment. I have to do it myself, except the garage - that is for hubby. Well he made the mess in there so he can clean it up. Organization is my thang not his. LOL

The Other day Kimberly posted a cheese muffin recipe on Facebook and I made them but I made up a crust for the bottom so now they are like little
I bought some stevia drops today.
This is the only one I could find with nothing else added to the ingredients.

CheeseCake Muffins

1 1/4 cups ground almond flour
1/4 cup ground flaxseed
1 tsp ground cinnamon
1 tsp unsweetened cocoa powder
1 large egg
2 ounces of each butter and coconut oil, melted
2 tsp Xylitol

In large bowl, mix together ground almonds, flaxseed, cinnamon, and cocoa powder and xylitol. In small bowl, whisk eggs and add butter and coconut oil. Pour liquid mix into dry mix and blend by hand thoroughly.

Grease a 9-inch pie pan with coconut oil or other oil. Transfer mix to the muffin pan and spread evenly along bottom. Set aside.

2 pkgs cream cheese
2 eggs
1/2 tsp vanilla
4 tsp Xylitol 

microwave crm cheese for 45 seconds to soften
mix all ingredients together with a mixer till smooth. pour into muffin pan and bake at 350 for 20 min. 
Let cool completely and place in fridge. 
makes 12 muffins *10 grams of carbs and 1 sugar each*

She said they taste better the next day after being in the fridge and eat with some Natures Hollow sugar free preserves on top.
OK - can everybody Get up out of your seats and SAY *** O-M-G!!! SO GOOD!

  1. Rosalie woman! Those look sooo good! i WISH I could try them but i rather not make them or i won't have the power to stop! they do look great though, iIve made cheesecake too, but man will i not go back there again! I just know baked goods don't help my weight loss

  3. That is one of the brands that Dr. Getoff recommended (SweetLeaf) so I think you're good. I like this more than the brownie one (wasn't sure about the black bean business). Dr. Davis had a recipe for lemon cheesecakes too I was thinking of trying. He eats cheesecake for breakfast - oh ya - who says eating this way is hard?! LOL ... Happy for you that you can finally move on - hopefully that helps your sleep/stress :)

  7. Well I am happy for you! I have never been a cheesecake fan, but maybe I will try it someday. I am just flat out being a bad girl...or "gurl" as my grandson says!

  8. I used to make a lot of little cheesecake treats in the very beginning, but haven't made any for quite awhile. So happy for your house news! Congrats!!

  9. Congrats!!! And those little cheesecake things look/sound fabulous! I'd eat them for breakfast, too. I've noticed that it's better to eat the 'treats' for meals than to just add them onto all the other foods, since they are so healthy anyway. Like the protein bites - I'll eat them for lunch or breakfast, too, and it's helping my weight a little bit. Slowly, but I'd rather lose weight slowly eating chocolate than quickly being deprived.

    1. Dr. Davis suggested his cheesecake for breakfast too - he said why not? It's healthy since it doesn't have the bad stuff in it (sugar and wheat). I'm totally going to try that. I sometimes have the protein bars at lunch with a shake if I want to make sure I don't get hungry until dinner.

  11. how do you freeze them? I have made some in the past before and tried freezing them and they literally turned hard as rock :( I am planning on baking some tonight but want to be able to put some in the freezer since ill be the only one who eats them!

    For the crust, you mentioned adding 2 ounces of each butter and coconut oil, melted. But the directions say "In small bowl, whisk eggs and add butter OR coconut oil". Should I add 2 ounces of one of them or both?

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
