Low Carb Waffles...

Ingredients:

2 large eggs
1/2 cup  unsweetened almond milk
3 tbsp melted butter or coconut oil
1 tsp apple cider vinegar
3/4 c of raw cashews
1/4 c of  sifted coconut flour
2 tbsp flaxseed meal
2 tsp baking powder
1/4 tsp baking soda
 1/4 teaspoon sea salt
3 -1/8 tsp or 3 pks of powdered stevia (I use Sweetleaf)

Instructions:

Place cashews in Food Processor and grind up.
add in all the other dry ingredients

melt coconut oil and milk in a glass bowl in the microwave

add all the wet ingredients and blend well

Put the batter into heated waffle iron I spray with coconut oil first .

Mine made 5 waffles.

I stored the extra ones in a large zip lock baggie with parchment paper in between in the freezer. 
 Then just pop them in the toaster oven to reheat . 

Each waffle has - C/16 - F/4 - S/<1 

These were good - ENJOY!

  1. Oh goodie! I was looking for a low carb waffle recipe as the last low carb waffles I made stuck to the waffle iron and came out in a zillion pieces! I had coated the waffle iron with melted coconut oil - what do you use to keep the waffles from sticking? Thanks!

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
