I've seen on the news the crazy weather in different places around the US. If you are in one of those places, I hope you are safe. Its crazy Beautiful over here.
Last night I made the batter for these delicious pumpkin pancakes I made this morning. I made a double batch and I was able to get 11 pancakes out of it. I ate 3 this morning for breakfast and put the rest in baggies in the freezer for another time. Very good.
I made some homemade butter
Then I made some Sunflower Seed butter with about 15 drops of SweetLeaf Vanilla creme stevia.
I did about 5 loads of laundry then when Hubby got home he brought us some lunch. I had 3 Chicken strips and a few of his fries and a zevia.
I tried to be quiet so he could sleep for a few hours. He's working nights.
I had tried to make a bun using Shirataki nooodles - you know like the ramen buns we keep hearing about. I coated the noodles in 1 egg then separated them into 2 bowls in the fridge.
I was gonna eat it for lunch but he brought the other stuff.
So for dinner I fried them in a skillet in coconut oil. I did NOT work at all. Fell apart.
So I put it on a plate with a bit of sauted spinach, 1/2 avocado and chicken. It was very tasty cooking the noodles in the coconut oil with the egg. I will do that again.
Me and the furry girls have been going for a walk every evening but poor Mandy has a hard time after 1/2 mile. I can't walk fast anymore and haven't been able to with them for quite a while now. Poor baby. She really wants to go until we get out there. But I will never give up on them. I will make them walk with me every day until they can't. What can I say - I love them.
Tomorrow Hubby and I are gonna go see that movie Gravity. It looks great! It's gotta be early cause he's working the night shift again.
My tummy hurts today. STUPID.....monthly seems to be coming so much faster the older I get. And my weight was up a couple obs - OF COURSE! Oh - when will this ever end???

How to convert Sugar to Stevia

Some tips if you are having trouble
- First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
- Track all of your sugar/carbs. Add everything from your meal together and count them that way.
- Try to stop eating whole grain carbs after 3pm.
- Make sure you drink lots of water.
- Count everything that you put into your mouth. Even sauces - everything , check labels.
- Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
- Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
- Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.

Interesting that the noodles didn't stick together with the egg. You have to be careful getting the 'bun' out of the bowl to fry it up with the ramen noodles, I wonder if you were really careful if you could get them to stay together.
ReplyDeleteThose pancake look delicious - I LOVE pumpkin! Can you believe that ever since I started reading your blog I have never been able to find those noodles? They also look so good when you talk about them but I'm shocked that I cannot find them here with all the stores we have between our town (Windsor) and Fort Collins. Sorry about your monthly - For the past 10 years, I've gotten mine every 21 days or so - ugh - no fun at all! Hope you have a great day! :)
