Muffin Head...

Hello Friends,

First I want you all to welcome; Kmeier or Krista. She is starting the BFC and needs tons of your support. Krista, the best thing to do is get all the bad stuff out of the house. If you can't do that - then at least get it all out of you sight. Hide the bad stuff in the pantry or cupboard.

Be strong and be strict with yourself. Just tell yourself that you are not allowed. That's what I did in the beginning. I just pretended like I was punishing myself, and I kind of was for letting me get so big. After a while you will get used to it. Let me know what I can do to help.

Boy I turned out to be a coconut flour muffin head today. I got up and ate breakfast of: carb chopper wheat tortilla w/cheese, some berries, and eggs scrambled with a bit of the chili I had left over.

I put some coffee in a mug and brought some coconut flour pumpkin-chocolate chip and chocolate-maple-walnut muffins with me. Oh yeah and a baggie of almonds and walnuts for a snack. Then I was off to my sister's to help move.

I got there by 9:30 It took me an hour to get there in traffic. The moving guys she hired were there, so I helped put smaller stuff in my car. Back and forth several times. Maria and I went to the new house and I unpacked the car and waited for the movers.

It was around 11 and I was hungry already so I ate a muffin. Then after 12 Maria and I went to look for something to eat in the car and wound up at Popeyes chicken. I had naked chicken tenders w/green beans. It was OK but when we got back to the house the mover were there and around 1:30 I was hungry again and ate another muffin. Actually 1 muffin is 1/2 serving.

I helped Lisa with this new dresser she bought at Ikea. She started to build it herself yesterday and messed it up. So I helped her take part of it apart and I figured out what she did wrong and we fixed it. TADA!!

Anyway after 4pm I started on my way home - IN TRAFFIC again and stopped at 2 stores quickly on the way home and got home after 6. For dinner I had some meatballs, broccoli, shirataki noodles and some alfredo sauce in a bowl. It was good and fast and easy in the microwave.

And you guessed it - after I had 2 more muffins, 1 pumpkin and 1 chocolate. I love them and I feel the recipes are perfect now for me. I am gonna add some sugar free chocolate chips to the top of the next batch of the chocolate-maple-walnut ones. YUM!!

Well that was my day. Not too eventful. I hope you are all having a good day.

  1. I love the title muffin head, it made me laugh. I am so glad that we have discovered pumpkin muffins and coconut bread. I don't feel like I am being deprived this fall at all. Hope your sis likes her new place. Have a wonderful day :)

  3. You are a nice sister. I helped my sis move, but there is no way I would or could help her put a dresser together. :) You GO Girl!!! I bet you were plenty tired after all of the moving? It sounds like a great workout. I think things are winding down with my daughters baton in the next few weeks so I will pick out some days that may work so we can finally do lunch. Don't forget the choco chips! LOL! :)

  5. HMMM? Muffins!! That may be my next venture into Coconut Flour land. The bread turned out pretty good last night. It was a little dry. I am thinking Saturday morning may be Coconut Flour pancakes for the kids and me.

  6. Should we call you Rosie the Muffin Head lol. I love that you can eat that many and not have to worry. Hope your sister got all moved in. I plan on shopping this weekend at walmart maybe I will pick up a square muffin pan.

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
