I am currently sitting watching the Conrad Murray verdict. He was found Guilty! I am a little torn about this. I have to believe that he could not be the only person responsible. Well anyways.
The other day Carey mentioned that she had the cauliflower crust pizza and it gave her a tummy ache. I told her that cauliflower gives me gas and the pizza did the same thing to me the first time and every time I eat it. But it is so good I eat it anyways.
So that made me want one so I ate one with turkey pepperoni on top for dinner last night with a spinach salad w/amies sugar free dressing and 2 chocolate-maple-walnut muffins w/redi whip for desert.
This morning had a great breakfast as usual.
2 egg cooked in my microwave thingy, (I put a bit of shredded cheese on top of the egg before cooking), turkey bacon, 2 oasis toast w/butter and peanut butter (1 gram of sugar), some black and raspberries, and coffee, blah, blah, blah. S-5/C-1
I don't like to go Grain free every day, like some of you have said in your posts-we have to shake up our system by eating different sometimes.
Lunch I ate the left over chili I made the other day on top of some baby spinach and warmed in the microwave so the spinach would wilt w/parmesan cheese on top.
It looks a bit weird - but BOY was it good like that. I also has some veggie straws w a bit of sour cream.
I made another batch of those coconut flour Pumpkin-chocolate chip muffins. I put 2 extra truvias in there for a total of 6, (plus the syrup). I am hoping that Hubby will like them better. He keeps saying every time I make something, that it needs more sugar for him. I will let you know what he thinks when he gets home from work today.
Man were they good and of course I ate one after my lunch. hehe.
I just to mention that the whole time I was trying to lose all this weight I was much more strict with my eating. That is how I lost all this weight.
But then on the other hand I did not discover the coconut and almond flour yet. For some reason, sometimes I think I am eating a lot because of the coconut and almond flour stuff. But whether I am making 12 muffins or a loaf cut into 12 slices, 2 pieces are 1 serving. So it just seems a lot cause it is so filling and good.
Well I am gonna run to Sam's club, Wal-Mart, and Sprouts. Gotta make sure I have all the goodies to make all this great stuff.

Everything looks great Rosalie. I love the muffins and I followed your recipe. I gave on to my mom. She thought it was good, but said it had a funny little after taste. I guess it's the truvia and maybe she's not used to it. I thought they were delicious. So much so, I have to be careful not to overdo them. Hope you have a great rest of the week! ReplyDeleteI finally made the pumpkin muffins again and thought they were better then the first ones. I made them your way and added some chocolate chips. I still think I like the coconut bread so much better but hey when it comes to eating something that looks and taste like dessert I am in.

ReplyDeleteI also purchased that microwave egg cooker-and love it. So easy to clean up too. Fridge to plate in just a few minutes.
Love the coconut muffins still! :) I think they go a long way in the whole grain free thing. I started eating coconut flour as a way to lower my carb intake on the regular BFC because it's such a better option - you get to eat more! Have a great day!

I think I like the coconut flour more than the almond flour. It sure is nice having baked goods again. If only the flours were not so expensive...

ReplyDeleteThose muffins look so yum! I really need to make those. I love anything and everything pumpkin. I think your doing so well with the almond and coconut flour because your using great portion control. I did that last week with some cookies I made, like last night I only ate 1 as my dessert after dinner. I second Kay's comment. If not your house we should meet somewhere. I suggest doing it in the spring.
