Pumpkin, Walnut, Chocolate Chip, Coconut flour muffins...

Good Morning All,

Thanks for all the support and comments

First I was to say a big WAY TO GO to Lisa S.B. who said yesterday that she has gone from 215-186 lbs so far. I am so proud of you and you will reach your goal in no time with all of our support.

The mechanic thing- I picked up my car yesterday and said nothing to him. I went to Sam's club and got those big boxes of 50 pk of different kind of chips to hand out for halloween in stead of candy. I also got rice crispy treats and cracker jacks and I am saving the big box of Pitrates Booty for last. That way I can keep those for me. They are BFC approved and good.

Then I went to Wal Mart and on the way home I stopped at this mechanic that I looked up online. I googled mechanics and found a great review from a customer saying how nice and honest he was. I told him the story with my car and he looked down at my rear brakes and said they are more than 50% still there. Anyway I think I found a new mechanic. I am going over there today for a oil change and tire rotation and he can look at my car for me.

OK - So - if you did not see on Facebook, I made Pumpkin, walnut, chocolate chip coconut flour muffins yesterday. I got the recipe off Amber's blog but it was missing something, so I did my research online and found what it was missing.

I must say that they were so good I ate one Hot after it came out of the oven. I could not wait! I put my revised recipe on the recipe tab above. I made 12 muffins out of 1 batch and they come to S-1/C-8 grams per cupcake with the nuts and 4 chocolate chips on top. So you can eat 2 - woo Hoo!

I bought this square cupcake pan at Wal-Mart, they just slid right out.

My weight is 150.5 this morning even though I am on my monthly, so I feel great today, just 1lb over my lowest. Did I say how much I LOVE Love love eating this way???

Hey none of you even said anything about the MILF comment from my hubby yesterday. When he said it I didn't know whether to be offended or laugh. haha

  2. I know--I can't believe anyone didn't comment on your husband saying you were a MILF. It's crude when you break it down but does kind of make you feel awesome at the same time, doesn't it? I can totally see why he'd say that. You look awesome!!

  7. I was called a milf when my oldest son who is 32 was in high school. By the time my younger son, who is 23 was in high school, I was far, far, far past that! It is a compliment, a kind of crass one, but a compliment! I think it is great that you husband sees you that way. My hubby was just showing me the new VS catalog and asking which things I would wear. I showed him one that had ruffle panties, that wasn't his "fantasy":)

  10. Rosalie, those muffins look great. I have the chicken chili in the crock pot now. I have alot of "home work" to do for the business, but it's such a great day to cook ( snowing, and cold) that I had to make something warm and comforting. I never heard MILF before. I guess I'm not as worldly as I thought! LOL! Still it's a compliment and we should take all that come to us! Hugs to you from me!

  11. I love the square muffins, I might have to go buy a square pan. I have never heard of MILF either and I thought I knew everything lol. Hope you have a wonderful weekend. I was wondering why you put the vinegar in your breads? Mine has been a little dry so I dont know if I am over baking or it that is what the vinegar is for.

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
