Ingredients:
8 oz. Soft Goat Cheese, Room Temperature
** I know the goat cheese sounds weird and you won't think it will taste good, but trust me. Try it once and see. It tastes like pumpkin pie without the crust.**
5 Large Eggs
15 oz. Pumpkin Puree
1/2 c. Xylitol
1 Tbsp. Pumpkin Pie Spice
1 tsp. Vanilla Extract
Directions:
In a mixing bowl, with electric beaters on medium or (I used my food processor),
mix together 2 eggs and goat cheese, until creamy.
Add in pumpkin, sweetener, spice and extract and mix until smooth.
To the mixture add remaining eggs and beat on low until just combined.
Line regular size muffin tins with non-stick liners (I used silicone muffin cups) and fill with 1/4 c. of mixture.
Bake at 350° F for 35 minutes.
Let cool on rack then refrigerate 8 hours or overnight.
**These pumpkin pie cheese bites are best after chilling in the refrigerator.
And definitely eat with some RediWhip or homemade whipped cream on top.

Some tips if you are having trouble
- First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
- Track all of your sugar/carbs. Add everything from your meal together and count them that way.
- Try to stop eating whole grain carbs after 3pm.
- Make sure you drink lots of water.
- Count everything that you put into your mouth. Even sauces - everything , check labels.
- Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
- Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
- Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.

DeleteYUM! Im not a big goat cheese fan, but I will trust you. I was at the 99 cents store, yesterday, getting baby wipes (I take my makeup off with them....no babies here ;)and I found a pack of those silicone cups. Score!!!! So excited to make something in them......If it's not too hot to turn on the oven!

I wish there was something to use besides pumpkin, seriously not a fan! You scored big time with your hubby!!! You could put those on your crusts that you use on the cinnamon cakes too right?
