Well lets see, Sunday I made another batch of Chocolate-Hazelnut-butter, and coconut butter. The coconut butter came out kind of brown cause of my ET's I accidentally dropped a BUNCH instead of a little cinnamon inside. LOL - but it still tastes awesome.
My dinner on sunday was a little bit of the turkey chili that Hubby so kindly left - but of course it was not enough, so I added in a pack of shirataki noodles.
My breakfast yesterday was some of Alpine Valley 12 grain toast with - of course the chocolate-hazelnut butter, turkey bacon and berries.
My lunch was a cauliflower crust pizza with some spicy hummus and turkey pepperoni on top.
I saw this online somewhere to make some zucchini chips, so I tried it. took a sliced zucchini and placed it on non-stick foil on a cookie sheet - and sprayed olive oil spray on both sides and shook on some sea salt and baked in the oven.
Of course this STUPID oven is always in Overdrive and no matter what temp the oven is on - it goes to the highest. I am waiting for the 1 year warranty paperwork to come in the mail so I can get it fixed.
They were pretty good.
Last night for dinner I had a spinach salad with tomato, feta cheese, bacon bits, and some 1g of sugar dressing. For desert I had a little clemmys and a BFC thin mint cookie from the freezer.
My breakfast this morning was the other 3 healthy-blueberry pancakes from the other day with my coconut butter on top and dipped in a tiny bit of syrup. YUM
I am supposed to have lunch with a friend today - so we shall see if she calls. She is a busy lady.I posted a few days ago on Facebook about my brother who lives in Michigan, his Ex-wife. She had a brain aneurysm a week ago and has been in a coma. Well last night she passed at the young age of 52. She was a very nice person and had a passion for saving animals.
She has 2 children with my brother Emily 19 and Ben 17. I feel bad cause I am so far away and can't do anything.
How short life really is. If you have anything in your life that needs fixing, ANYTHING - don't wait.

First and foremost, I am SO sorry about your former sister-in-law. How very sad.
ReplyDeleteYou are correct in making things right today and not putting it off. We aren't promised anything in this life other than the moment we're living right now. Life is precious and goes by SO quickly. :(
Your food looks awesome as always!
I sure hope you and your friend get to go out together today. Sounds like fun!
Have a great Tuesday, Rosalie. :)

I'm so sorry about your SIL. Don't feel bad that you can't be there...As for the life being short, I totally agree. Life is too short to live with regrets. Your SIL was very young and who knows when our time is up, so live life to the fullest.
ReplyDeleteI hope you get to have lunch with your friend so it takes your mind off of things!
Have a good day,
Carey
I'm so sorry:( I know when people die that are younger than we are, it is a true wake up call. Today is the day, and now is the time! I'm sad for her children too.
ReplyDeleteYou are just so creative with your food!
So sorry about your SIL. So sad for someone so young to leave this world. I certainly know what that does to a family. I am struggling over here, so I just wanted to tell you again that I really love to see your posts and they always give me hope and encouragement that I can do this because you lead by example. So thank you, and sending you hugs and love! XO!
