The past couple days...

Good Morning Friends,

Well you remember the pumpkin-protein pancakes, My breakfast on Monday.
 Lunch was awesome. Tacos - I made 2 homemade corn tortillas with a tb of chia seeds inside and a little cheese melted on top, I sauted some onions and green peppers and ate it with some chicken and sour cream.
 My snack was a few berries and the last spoon of Almond-Joy butter.
 Dinner was just a spinach salad with feta cheese, tomato and 1g of sugar dressing.
 For desert I ate 2 protein bites. I tried to whip a little bit of Heavy whipping cream in a bowl instead of rediwhip - but it tasted weird to me. I did add some vanilla stevia but to me tasted more like the butter. IDK, never did that before - suggestions?

Breakfast Tuesday was toast with my homemade butter and almond butter, eggs and berries.
 Lunch was 2 homemade corn tortillas with the chia seeds inside with melted cheese on top, some baby spinach and a last LONELY salmon patty I found in the freezer with some horseradish mayo on top.
 I have to tell you that I am really diggin the homemade corn tortillas now that I know how to do it. LOL
For my snack I ate some of these crispy green bean thingys I got for hubby and a few plantain chips I bought for him in the bin at sprouts. Both only have 1 g of sugar per serving.
 For dinner last night I made some sauted veggies in EVOO, celery, zucchini, onion, garlic, asparagus, green pepper, mushrooms, kale - I think thats all, and added in some braggs amino acids and alfredo sauce for flavor and a few meatballs.
Yesterday I ran a few errands and then met Hubby's friend from work - his wife to show a couple houses for lease off the MLS in the afternoon. That was fun and I swear one of the houses was one Hubby and I looked at for sale over a year ago. I am almost positive but it has been so long and we have looked at so many houses I get confused. And besides you all know I got Middle-Heimers anyways. LOL

The weather is absolutely gorgeous over here, yesterday clear and 75 and today 80. You gotta love California.

We are waiting to hear on the house stuff. Hubby is working many days in a row and is a walking zombie.

  1. Those pancakes look amazing, I have five cans of pumpkin waiting to be used so I think I might try that. I never realized how hard it can be to buy a home, what a crazy year you have had.

  2. Goodness, I LOVE your meals and that you post photos of them!! I love making corn tortillas also - my kids, especially, using the tortilla press. You're so good about eating your veggies... I'm trying to get more in my diet.

  3. Rosalie - I did hear on the news about the housing market in some other areas of the US being similar to CA. There are houses all over the state of IL for sale! I think everyone is getting out because our state is in such bad shape!

    Glad you got to show some houses. Maybe a sale for you and you got out of your house for a bit of time!

    I agree with Kerry - those pancakes look great. I also have many cans of pumpkin that I need to use up. Good idea to use the tortilla as a bun!

  5. I have got to try that. I was at the store today and thought of you as I was shopping for kale. I want to try the chips...but have never had kale. So, i put it back. Then I strolled down the chip isle and they had bags of kale chips. I didn't buy any...cause i don't wnat to waste them.

  6. Did you add vanilla to the heavy cream? You also may have whipped it too long? I love homemade whipped cream, it is delicious! I use stevia instead of the drops. I need to buy some drops and I need to try the protein powder. I have been saying that for over a year!

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
