Good Friday Morning to you all,
Right now its in-between the rain and I think it might rain some more today. How about where you are?? How's the weather??
So this was my lunch on Wednesday. I made a big pot of turkey chili. and ate some with toast with cheese and avocado on top.
I used
1 yellow onion saute in EVOO - not all the way about half was cooked then added
a 2.5 lb pkg of ground turkey,
Then when it was 3/4 of the way done I added 3 celery stalks and 1/2 green pepper cut up,
some garlic, red pepper, cumin, chicken bullion
1 can of coconut milk-this makes it taste real good.
I use this kind when I add it to my cooking.
When I make turkey chili I just wing it and use what I have on hand in the fridge at the time.
I added 1 small can of cut up stewed tomatoes
Some water maybe 3 cans, a zucchini cut up - let it simmer for a while then I added a whole bunch of kale torn into small pieces off the stems. - OH yeah - almost forgot Jalapenos - DUH!!
I had to post this picture of Peaches. She always sleeps like a stuffed animal who got tipped over with her legs straight our.
My dinner Wednesday was - DUH chili.
My breakfast Thursday was Al'pine valley toast with butter and my homemade almond butter and turkey bacon and berries.
Lunch was DUH again - Chili and 2 small homemade corn tortillas with some chia seeds inside. I usually soak 1 tbsp of chia seed in a bit of warm water in a bowl for a while then add the masa flour and a bit more of warm water to form the dough. - then grill on my pancake grill at 300 degrees- flipping a few times till they look done.
Yesterday I found a new vet up here in Rancho and made an appt to get my girls a check up.
They waited patiently with me like good little girls. Peaches weighs 29lbs and Mandy was 58.
Last night I ate a spinach salad and the last 6 wings that was in the freezer. And as always I ate 2 protein bites and some rediwhip for desert. My name is Rosalie and I am an addict. LOL
I found this new salad dressing that tastes real good and has only 1 g of sugar per serving. Don't ask me where I got it - cause you know I got Middle-Heimers. It was either Ralphs or Sprouts.
Look at this picture - Hubby comes home this morning after working the night shift and gets in bed to take a nap. OK - where is Mandy?? Up under the covers with him on my pillow. LOL
My breakfast this morning.
A few bites of a pork chop hubby brought home, a few raspberries and my VERY FAVORITE muffin.
Melt some coconut oil in a large mug or bowl, add 1 egg, 1 tbsp of each - flaxseed, almond and coconut flour, 1/2 t of baking pwdr, 1 tbsp of Natures hollow maple syrup, 4 drops of sweetleaf vanilla stevia, mix well and add in some unsweetened almond milk - enough to make it the right consistency, then I add in some walnuts I crush and a small handful of blueberries. Put in microwave for 2 minutes and cut in half and eat with butter and Natures Hollow preserves.
I took my girls back to the animal hospital this morning to get their teeth cleaned.I have never done this because it is soooo expensive ( maybe $400ish each - Credit card here I come) and a little dangerous for older dogs like mine. Mandy is about 8 and Peaches is about 13. Not sure exactly cause I adopted them - of COURSE..
They had to do a blood panel first to make sure they were healthy enough. So here I sit and wait for them to call me.

How to convert Sugar to Stevia

Some tips if you are having trouble
- First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
- Track all of your sugar/carbs. Add everything from your meal together and count them that way.
- Try to stop eating whole grain carbs after 3pm.
- Make sure you drink lots of water.
- Count everything that you put into your mouth. Even sauces - everything , check labels.
- Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
- Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
- Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.

Good Luck to you babies during their teeth cleaning! Guinea pigs have these cool teeth....Their teeth grow like fingernails so they have to chew on things to keep them filed down :) Anyhow, you have me craving chili now and I just got home from Sprouts. Right when I stepped outside the door of Sprouts it started pouring rain and it's still raining. I think I'll go make myself a BLT with that Alpine bread.

I hear you about the teeth cleaning. So pricey. But our pets are worth it right? Love chili and yours sounds so delicious. I always put a few squares of the dark chocolate in mine too. I believe that is common in Mexican chilis and somewhere I read it in recipe. Just gives it a nice richness. I always freeze some of mine up so that I can have later. Or you can eat it at every meal like you are doing!!LOL!! I was going through all myBFC recipes the other day and my goodness I have so many variations of the panakes, coconut bread and muffins. I forget which ones I like best. But I have to confess your muffin recipe, with all the flours sounds pretty darn good. Have a great weekend. Snowy and dreary here!! XO

Your chili looks wonderful, thinking I'll have to make some. I love using coconut milk now! It adds so much flavor and a little thickening action. Hope your week-end is good! Take care. Awww, your dogs are such cuties! I heard getting their teeth cleaned is a good way to prevent illnesses.
ReplyDeleteI also love coconut milk and have been using the "Native Forest Organic Unsweetened" brand I found at my grocery store. It is so creamy. I use it in my coffee every morning!

Love your doggies and your writing! We just got back from Vegas where DH was sent for a conference. Had a follow up doctor appt today to go over endoscopy results and blood work...was eager to jump back on the BFC but doctor thinks err should try the Paleo diet...sigh. I told DH I'm not eager to try another way of eating, but I will research it.
