Cauliflower-Cheese-Jalapeno Muffins

Ingredients:

2 cups finely riced (shredded), raw cauliflower
2 Tbl minced jalapeno
2 eggs, beaten
2 Tbl melted butter
1/3 cup grated parmesan cheese
1 cup grated mozzarella cheese
1 cup grated cheddar cheese **( I used what I had-colby-jack) and you don't really need 2 cups of cheese- 1 cup of any kind mixed will do***

1 Tbl dried onion flakes or powder
1/4 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1/2 tsp baking powder
*a little red pepper

1/4 cup coconut flour

Combine the cauliflower, jalapeno, eggs, add melted butter in a medium bowl.
Add the grated cheeses and mix well.
Stir in the onion flakes, salt, pepper, garlic powder, baking powder and coconut flour until thoroughly combined.

Divide the batter evenly between 12 greased muffin cups.
Bake in  preheated 375 degree (F) oven for 25-30 minutes or until golden brown.

Turn off the oven and leave the muffins inside for one hour to firm up.  ** I don't know why you would want to do this, because after 25 minutes mine were golden brown and delicious.
Remove and serve warm or cold.

Makes 12 muffins
2 carbs, 1 sugar each

  7. the only problem i have with some of these recipes is all the different flours (which are too expensive for me) special sugars etc etc...need something simple!! but they sure look yummy! carole

  9. I finally made these and were sooo yummy...the whole house smelled yummy..my question tho with all that cheese how much fat and cals is in there cuz im watching the fat too carole

    1. Carole if you only use like 1 cup or even 2 of cheese that's not really that much. Divide that up by 12 muffins. And sorry I really don't know how much fat and calories - I never count that. But these are healthy and delish!!

    Quick question...at the end you state 2 carbs, 1 sugar each. I'm probably over-thinking this way too much but do you mean 2 grams of carb and 1g sugar right? Thanks!

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
