Chicken-Crust Pizza

Hi Everyone,

How was your Saturday? It was a bit cool over here for us today, right around 60. I know - I know, that's now really cold, but when we are used to it being 80 and then today you have to put on a sweater - OMG! I'm just trying to give you a hard time - sorry. Remember I grew up and lived in Michigan so I can tease like that.

My breakfast this morning was the last 2 pancakes, berries and 2 eggs.
 Hubby was working day shift today and he looked up a house I went to go look at by myself. Not gonna work is all I can say.

I went to Pasadena after that and picked up Maria and I found a cheap movies theater on Colorado that was only $2 each, so we went and say FranenWeinie. She likes cartoon movies and it was cute. We both had popcorn and 2 squares of Girhadeli 86%. That was my lunch for today.

When I took her back home Lisa my sister was there and we 3 visited for a little while
 Maria gave me this little pan that folds in half. I am going to use it for eggs, omelets or maybe even muffins or pancakes.

I stopped at Trader Joes on the way home. I couldn't find anything in there that I was looking for as usual. I am not a FAN at all. So I went to a nearby Vons and found some So Delicious mint-chip sugar free ice cream and some Almond Oil. I am gonna use this when I make my homemade almond and hazelnut butters. Coconut oil does not work well in the nut butters to me and does not taste that great in there to me. I usually use macadamia nut oil but ran out.
FYI this says to refrigerate after opening.
I got home and it was around 5 pm and hurried up and put on my Faux leopard fur jacket and took the girls for a fast 1.3 mile walk. Brrr it was a bit nippy.

So now I was hungry with only eating the popcorn for lunch so I had a spinach salad.
 And this is something I saw on Facebook a couple times so thought I would try.
Chicken-Crust Pizza
I took 1 can of chicken and mixed it with some shredded cheese, about the same amount, garlic, italian and red pepper spices and 1 egg.
I lined a pie pan with parchment paper and put half in -
then a little pasta sauce
then the other half of the chicken mixture
then some turkey pepperoni on top
Baked in the oven at 400 for about 15 minutes - let cool before eating. It should slide right off the parchment paper on your plate.

If you have not tried this yet - I recommend it. It was chickeny-cheesy good.

So right now I am watching my favorite thing to watch on TV - The Sci-Fy channel and drinking some chocolate-chai decaf tea. My tummy hurts and seriously?? I am getting tired of that monthly monster visiting me and my age of 53.

So on the Invisibles front; Peaches jumped up on the bed in the middle of the night on Thursday night - which by the way she never does and wouldn't get off and Mandy was on Hubby's side of the bed scared too. IDK they must have seen something that gave them the willies.

Tomorrow I guess I will clean a little around here. OH Darn!!!! I just remembered I had a buy 1 get 1 free coupon to use at Boston Market that was only good for today - Seriously kicking myself right now..........

OK have a nice Sunday and if possible don't forget to get out and go for a walk of at least 1 mile or more. It will make you feel better - I promise.

Oh and by the way, thanks for the $10 tip whoever that was :-)

    I think i will try that when I crave pizza, I am starting to realize that anything can be made into a crust nowadays lol :)

  3. Remember when pizza was something we had when we didn't feel like cooking?! Now it is a process..., although the results are good. Haven't tried chicken pizza yet and honestly it's the first time I've heard about it. See how the blogs spread around good ideas?!
    We saw Argo last night at the movies and I thought it was excellent! Turns out the CIA guy in the movie(played by Ben Affleck) only lives an hour away from me and is a painter now! Cool!

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
