My breakfast yesterday was 2 Oasis toast w/butter and peanut butter and blueberries on top and 2 eggs. |
On the way in the car I ate 1 low fat string cheese and a few walnuts.
By the time we were done it was after 2pm and I was a bit hungry so we decided to go to Red Robin. I had a burger w/blue cheese and buffallo sauce and they gladly wraped it in lettuce for me and I had about 7 fries w/ranch to dip.
We stopped at the store and we got home around 3:30 and I couldn't wait to try one of the CheeseCake muffins I made the day before.
For dinner I just had a spinach salad w/feta cheese, bacon bits, a few bites of left over chicken and Sprouts spicy chipotle dressing.
Breakfast this morning; |
1 tb coconut oil, 1 tb chia seeds, 1/2 t baking pwdr, 1 egg, a little U.S.A. milk, 1 heaping tb of coconut flour, a little bit of shredded cheddar cheese, and 1/3 small zucchini cut up real small. Cooked it in the microwave for 2.15 min and ate w/butter and natures hollow on top. Real good..
You know I have a recipe for Zucchini-Cheese coconut flour bread on my recipe page and I LOVE the way it tastes with the zucchini and cheese inside and thought I could make it individual too, and it was GREAT!
This morning my weight was back down to 151.5 so that''s 2 lbs less than the other day and only 3.5 higher than my low. I feel better eating my tortilla and toast the past 2 days and my tummy doesn't feel as bloated. Hopefully by the end of the next week I will be back to normal.
I remember when we first started with the morning muffins, some of you that track stuff in MyFitnessPal were saying that it had WAY too many calories. I agree and think the Almond and Flaxseed flours are just too fattening and am gonna reserve Almond and flaxseed flours for my treats and not muffins anymore. We shall see if that helps.
Lunch today was a Carb Chopper wheat tortilla w/pepper jack cheese, jalapenos, avocado, a turkey patty and some hummus.. I have to say the flavor was awesome and it really hit the spot.
snack; I had some of my addiction food; popcorn.
Hubby is working nights the next 3 nights so I don't know what I will eat for dinner yet. I plan on going for a long 3 mile walk with girls in a few.

I am too staying away from baking with those flours, I feel like they have not helped at all, like I've mentioned in my blog.

I love coconut flour muffins. I would have never thought to put zucchini and cheese in them, but I will have to try that.

I think you're making the right choice with the almond flour. I only use it sparingly. I've grown a bit tired of the taste of the flaxseed meal at the moment as well, so that's going in the back of the cupboard for a while. Have a good weekend, and stay out of that heat! It's hot here , too, not that hot though. :)
ReplyDeleteI only use almond flour in the protein bite treats and have stayed away from the minute muffins for awhile now. It's all trial and error I guess to see what works with each of us.
ReplyDeleteI'll be a little sad if it gets to that point and I have to eliminate the almond flour. I don't think I overindulge in it but I do have a little most days. Variety is what keeps me super happy eating this way and all these “flours” helps to keep things varied. Dr. Davis said in a recent on line chat that he didn't think you could overdo nut flours if you were eating them within reason (clearly not an entire pan of protein bars ... lol). I guess time will tell for me. Glad you are back down - I'm sure you are relieved :) On that note, I’m off to make cheesecake with a pecan crust … nail biting … hopefully I won’t be up next week :)

DeleteDr. Davis suggests eating it one morning for breakfast since there is nothing bad about it. I'm going to try it too :) I just made his lemon cheesecake which is quite similar to your muffin versions anyway (I'll post about mine so you can see the differences). I added a bit of cocoa to his crust recipe ... the filling taste divine but the whole pie is still baking so it will be hours until I get to try a whole slice. I may try and freeze some slices and see what happens. I have a line up of friends who all want a piece so I'll see what's left after that.
DeleteI am about 4 weeks in with BFC. I feel lighter, pants are a tad loose, but I have not lost. I am mainly eating the fast track diet, with 0 grains, but am eating bread I make iwth almond and flax flours. I am interested in what you have to say about those causing weight gain, or at least stalling loss. I have not read the book, so I do not know the science behind the carb limits. Is it really best to inlcude portions of grain carbs to support loss? I am not only interested in quick loss, I would like healthy loss over time.
