Yesterday was a beautiful day over here in Sunny Southern California, 65 degrees. But today on the other had it is around 50 and has been raining all morning so far. Oh well I guess that song is wrong.
My breakfast yesterday;
a carb chopper tortilla w/cheese, turkey bacon, berries, 1/2 avocado and a omelet made w/sauted baby spinach and feta cheese.
Here's how I do the omelet;
I saute what ever veggies in the pan first w/ EVOO. In this case I only used baby spinach, when it was wilted I added in the pan 2 scrambled eggs, cooked on medium heat until it was 3/4 way coked and then slowly and carefully flipped it over added some feta cheese and folded in half. That's it.
Lunch; Cauliflower crust pizzas for me and hubby.

I made the crust like usual on Parchment paper but I added some cayenne pepper and chopped up jalapenos (from the jar) in the crust. I love to do it this way, it makes it Zingy.
Then I added some seeds of change-romagna 3 cheese pasta sauce, mozzerella cheese, turkey pepperoni and mushrooms.I LOVE PIZZA!!
Then I went outside and cleaned up some stuff in the yard and then took my babies for a walk.
Dinner;
tuna fish, olive oil mayo, shredded cheddar cheese, celery, 1/2 avocado and pickle cut up, and of course bacon bits and baby spinach . Good Salad.
My desert was tea and the last 2 lemon coconut flour muffins w/ natures hollow on top.I eat a bit more now than I did while I was losing because I don't want to lose any more weight. I like my size the way I am. I would not have eaten those muffins before while I was losing.

Today Hubby and I were supposed to go to our old neighbors house for their 4th son's 1 year birthday party. It said rain or shine but it RAININ DUDE!! So we will see.

I made the cauliflower pizza crusts this past week. I didn't think they were too bad! 3 and 4 yo didn't know the difference, 6 yo was NOT impressed, hubby...not so much either! Darn!15 yo ate them without complaint, but he'll eat anything lol. Next I'm going to try the almond flour crusts, hopefully that will win them over! :) Hope you have a great day! That pizza looks amazing. I need some time to make myself some of these things. I am making some chicken soup right now. But I'm too pooped to do anything else. Tomorrow I'll make some coconut bread. I really need some of that! Big hugs to you from me. Don't complain about the rain....we got 3 inches of snow this morning!

I am two weeks into my new weight loss journey and after reading your blog it has inspired me to believe that I can keep it off this time. ReplyDeleteI'm with you on that Elspeth, I did the same and went back to Rosalie's previous post from the beginning and got inspired and fired up, Rosalie is so awesome she also talked with me on the phone and it was very encouraging, we talked Wednesday I started Thursday and today I'm down 4lbs! We can do this and Rosalie is right there with us.
DeleteSo for my breakfast today, I sauteed some leftover steak/mushrooms... poured in a couple scrambled eggs, simmered it til the eggs set then dumped shredded cheese on top. And I had an ezekiel english muffin with it. So basically a count of 0/2. That's it, and found myself wondering "What would Rosy have done with this". It was fairly tasty, but sort of boring nonetheless. So I came back to see this breakfast pic of yours and thot... I could have had my avocado, could have added my spinach to the frittata... couda wouda shouda.. :)) So Rosy, you GOTTA keep posting your meals and ideas like this. It helps a lot!
ReplyDeleteI'll have to dig up some "before" photos from just regular photos that I have. I never did an "official" photo when I started. Like most of us, I tended to avoid the camera a lot.
ReplyDeleteHey Rosie! I just made some of the coconut muffins into cheesy biscuits and they are quite good. I made your basic cocnut bread recipe (minus the stevia) and added a little cayenne (1/8 tsp), chili powder (1/4 tsp) and garlic salt (1/4 to 1/2 tsp) and then some cheese (about a cup). I baked it like normal in the little square (Walmart) muffin tin and they are really good and taste more like a biscuit. Yum! BTW, I KNOW I don't have before photos because I don't like pictures (even when I'm thin) and I shredded any picture that I didn't like :)
