Pumpkin muffins, Almond Pancakes, and WOW!

Good Morning all,

Well I have to say, those cookies I made the other day were a big hit with Hubby. He hasn't stopped eating them. I'm gonna have to make some more.

Yesterday I made the coconut flour pumpkin muffins from Amber's blog.

My batch made 12 and they were good but were definitely missing something. Not sweet enough.  I looked up coconut flour pumpkin recipes on the internet. What did we ever do w/o it before? So the next time I make them, I am gonna change it to 6 eggs w/no milk, and 1/4 cup of joseph's sugar free syrup, and 1/4 t of ground cloves. I think it will have more flavor that way. I put it on the recipes tab and post changes after I make them again.

This morning I made Almond flour Pancakes.
I am afraid I let them get too brown. The whole batch made 6 and I ate 3 w/butter and S/F syrup and some berries. All together my meal was S-5/C-1
I thought the taste was WAY different from the coconut flour ones. Very good! You should try them. (on recipe tab above).

You know what is funny about eating all this coconut and almond flour stuff? I feel like I am eat a lot but in actuality I am not. I love it!

Yesterday I was getting ready to get in the shower and I was letting the water get warm and in my birthday suit (of course). I was looking in the closet to find something to wear and took out a pair of my old pants. I kept in the back of the closet 1 pair to refer to for later. It was my favorite and most comfortable jeans from before. They were size 18's and always skin tight and I had to leave the button open at the top. Come - ON girls, you know!!

I put them on and could not believe my eyes.

I tried to take my own pictures, but it didn't have the same effect that I saw myself. I could actually fit another me in there! Literally. I am not sure if you can see it or not? With my E.T's it was hard to hold my hands still.

Well anyway, it is so hard for me to realize that I was actually that big. The thigh and waist area was twice as big as I am now. My hubby said this morning, Do you remember when you were ever this small?? I think it was 28 years ago when my daughter was 5. WOW!!

I just want to say that I am a regular person that got lucky and found the perfect thing for me and lost 88 lbs. I feel and look like a whole different person.

I want to encourage all of you and let you know:

That if I Can DO IT - YOU CAN DO IT TOO :-)

    WOW, two Rosie's in those pants for sure!!
    I am so glad to hear you love your new weight and how you are sticking with it.

    I added more sugar my batch and I eat it with whipped cream!! It will be around for the holidays...Can one freeze it??
    But then again it may not last since it is very tasty and filling!!!
    I would eat the whole loaf for the holidays and still be a happy BFC/FT gal!!

  5. I used 5 packages truvia and 1 pkg. xylitol. It was pretty good, especially with redi whip. Almost like having pumkin pie. I think the sweeteners are just not as sweet as sugar. I'm thinking about trying a tbsp. of coffee in my chocolate bread for more flavor. Good job, Rosy! I'm so happy for you and I love all the great tips.

  8. You are amazing!!! Can you believe it? I am so excited for you. I have to say that I will be curious to see how all of these almond/coconut flour treats do for everyone's weight. I hope it holds true with the S/C rule. I had a couple of bites of hubby's pancakes on vacation. OMG....I just don't want to get the syrup and find out that it upsets my tummy. Malitol does make me a little queasy.
    You are the inspiration for so many!!!
    You even have a purple phone cover!!!

  9. I love the photo with your old pants! For some reason I got rid of ALL my big stuff immediately. We had a charity garage sale and most of it went there. But I really wish I had kept my big jeans too.

    Did you make the icing for the muffins? They are what makes them sweet.

  10. It has to be such a great feeling trying on old pants that you use to squeeze into now have room for 2. I am gonna try making the pumpkin muffins this weekend and may try a little of my own spin on it. I love the coconut bread and your right you feel like your cheating but your not....love it.

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
