I wanted to share with you all that as of today, August 20, 2011, I have finally reached my goal of 150lbs. I got so excited that I called my 33 yr old daughter who lives in Michigan and she was the first one I told. I almost cried and she told me how proud of me she was that I had that much will power and did this.
I want to thank Dawn for sharing that coconut bread recipe with all of us. Since I first tried it, I have been eating it at least once or twice a day and I think that has helped me lose those last 4lbs. Really I think it helped cause it is filling and 2 slices is only like 8 carbs and it feels like eating 2 slices of regular bread or a tortilla.

Yesterday I made a Spinach loaf w/a frozen bag of spinach, 1 zuchinni shredded, a little bit of yellow onion, a few mushrooms cut up in little pcs, garlic, salt, about 7 eggs I think, and some mozzarella cheese, mixed all together and baked in a loaf pan on a cookie sheet (it makes a mess) @ 350 for about 1 hour and 15 minutes. Slice into 12 slices and it was so good!!! I put some Parmesan cheese on top and some canned chicken and ate 3 slices for dinner. It was very good. S-1/C-0
This morning for breakfast I had 2 slices of coconut bread w/Nature's Hollow on top and 2 eggs w/cheese, 1/2 avocado and some berries, and my coffee w/truvia, clear Benefiber, powdered cream, and cinnamon. S-5/C-1
I don't know what I am doing today, Hubby is sleeping right now. He's been working a lot night shift the past few days and comes home at 7am. He goes back in tonight at 6pm and won't be home till 7am in the morning again.
I have to drive his daughter to LAX Airport tonight at 9pm. She is going to Singapore for a dancing thing. Just go to YouTube and type in Knicole Haggins, that will pull up a on of her videos. She is really good.

W00t Rosie! That is so awesome!! I was really wondering about the new bread affecting your weight, but I guess that answers that question. I bought some unsweetened coconut flakes and flour at Whole Foods this week and wanted to make a things with them.

ReplyDeleteA product you might like: Joseph's Flax, Oat bran, and Whole Wheat Pita's (Wal Mart) 8 carbs each, 0 sugar, 4 fiber. So thin you can roll your eggs in the whole thing like a tortilla. Delicious!
