I am totally hooked on this Lemon...

Hello all,

First I wanted to say that I am kind of scaring myself at how hooked I am getting on this COCONUT Bread. The first time I made it Hubby really didn't like it too much. I have been trying to get him to try all the other flavors I have been making - but he won't.

So I am forced to eat it all by my self - OH Poor me....LOL! I am eating it like 3 times a day. 2 for breakfast, maybe 1 for a snack between lunch and dinner and them 1 or 2 after dinner. It is so low in carbs and sugar and high in fiber.

So I am not sure if you saw my post on Facebook but,
I made Lemon Coconut Bread the other day: 
using, 12 truvia, 6 eggs, 2 tsp of baking powder, 1 tbsp of ea. vanilla and lemon extract, 3 tbsp of lemon juice, and about 2 tbsp of cream cheese. I really researched about lemon bread before I tried it. I have to say it tastes perfect to me the first batch. I put some cream cheese on top and it is Divine!! I am totally hooked on this Lemon. My absolute favorite so far!


Here's what I ate to day to give you an idea:
breakfast; 2 eggs w/mushrooms, baby spinach, feta cheese, sausage crumbles, and 2 coconut lemon bread w/cream cheese on top and a few blackberries on top. S-3/C-1
lunch; a turkey patty cooked and cut up, 1/2 cup of brown rice, a few mushrooms, 1/2 cup of shredded cauliflower, a spoon of pesto sauce and some parmesan all in a bowl. S-2/C-1
snack; 1 piece of lemon coconut bread w/cream cheese and natures hollow on top S-1/C-1
dinner; meatballs and broccoli and a bit of seeds of change pasta sauce in a bowl, and a spinach salad w/goat cheese and amies sugar free dressing.  S-2/C-0
After diner; Surprise - 2 coconut lemon bread w/cream cheese S-1/C-1


In case you don't know, during the past year and a half while I was trying to lose weight on the BFC I would NEVER eat grain carbs with or after dinner. That is one rule I always followed and it helped me tremendously. But I feel that now that I have reached my goal, I can allow at least the coconut bread since it is so low in carbs (8 g per 2 slices) and only 1 sugar.

To Anonymous: I am guess it's a she,
She said she is 53 and lost 10lbs and has 20 more to go ( Great so far), but it's not on the tummy, mostly on the butt hips and thighs. 


UH - have you seen my before pictures?? That is mostly what I had - all butt, hips and big thighs. Now look at my after picture.


I wondered that myself if it was gonna come off my hips and stuff cause it's called the Belly Fat Cure. It starts to come off the tummy first then comes off the other places next. My back fat is gone now, I had rolls let me tell you. My hips and thighs and small enough now that I can actually wear size 8. I'm pretty sure that I could not even fit my big toe in a size 8 before. HAHA.


This does work people. You have to be honest to yourself and everyone else. You ave to make sacrifices in order for this to work. You can't cheat cause you will only hurt yourself. When you are at a function - do like I did and do, just find 1 thing that you loved before, and take 1-3 bites then stop!! If you can't stop, then don't do it. It helped me to feel kind of normal at those times and not feel so alone and left out.


As far as maintenance for me,
I am not sure that I am gonna change anything for right now. I am happy and I get to eat stuff that I love like eggs, cheese, meat and many other things. I think this is where some might do the wrong thing, by thinking that they can eat other stuff now that they have reached their goal weight. If I change anything, you will all be the first to know - I promise. 


I have come so far and I refuse to do anything to mess this up or go back in reverse.

  1. Thanks for sharing, Rosy! I am glad to have your insight! Technically, the coconut bread is still a no grain carb, because coconut is a fruit/nut/seed (it's a drupe) - hooray! :)

    I've gotta try out the lemon - today I made banana bread. It's pretty tasty - can't wait to try it tomorrow morning after it's sat in the fridge overnight.

  3. When I saw you post the lemon coconut the other day I was thinking "Why didn't I think of that" because I love lemon flavor! Think I'll try it today. Do you ever have trouble when you post your blog of it not updating in the blog rolls? That seems to be happening to me almost every time. It takes about 2-3 hours after I post for it to update. Weird!

  5. Thanks for the encouragement about the hips. I did notice your measurements and picture. I guess that has always been the most difficult place for me to lose, so I just needed to hear it.
    I made the chocolate coconut bread this weekend and it's delicious. I put a couple of sliced strawberries on top and redi whip. Yum! Only one problem. I don't know if it's the erythritol (sp?) or the fiber in the coconut bread, but I think I better not eat 2 slices a day until my body adjusts. I think I got a little too much fiber...
    I can't wait to try the lemon!!

  6. So with a dozen eggs in it, does the lemon bread get higher? The one I made was only about 1 1/2 inches high? Did you cook it for less time than the original 40 minutes?

  7. Kay, What are you putting in it? 7 eggs were great for mine or in the lemon only 6. And only 3/4 cup of coconut flour. Mine came out maybe 3 " tall.

    Thanks, I too love the coconut bread. The cinnamon reminds me of
    zucchini bread so I might try adding some zucchini. I also like to make
    make mine in mini loaf pans then I don't feel so bad eating the whle
    loaf over the course of a day :)

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
