Pancakes and 2 Minute-Muffins

Oatmeal-Protein pancakes

1/4 c of rolled oats and 1 tbsp of chia seeds in a bowl with enough unsweetened almond milk to cover and let sit for a little while to soak.
Add 1 scoop of Whey protein powder - I used strawberry this time, Sun Harvest brand from Sprouts
2 eggs and mix well
This batter is a bit thin so you have to use a small frying pan and cook 1 at a time
I use coconut oil spray in the pan.

The texture and taste of these are great....
Makes 2 big pancakes   s/c= 2/2

CheeseCake Muffins


Side View
Crust:

1 1/4 cups ground almond flour
1/4 cup ground flaxseed
1 tsp ground cinnamon
1 tbsp unsweetened cocoa powder
1 large egg
2 ounces of each butter and coconut oil, melted
3 tsp Xylitol

In large bowl, mix together ground almonds, flaxseed, cinnamon, and cocoa powder and xylitol. 
In small bowl, whisk eggs and add butter or coconut oil. 
Pour liquid mix into dry mix and blend by hand thoroughly.

Grease a muffin pan with coconut oil or other oil. Transfer mix to the muffin pan and spread evenly along bottom. Set aside.
Filling:

2 pkgs cream cheese
2 eggs
1/2 tsp vanilla or lemon extract
4-5 tsp Xylitol 

microwave crm cheese for 45 seconds to soften
mix all ingredients together with a mixer till smooth. pour into muffin pan and bake at 350 for 20 min. 

Let cool completely and place in fridge. 
makes 12 muffins *10 grams of carbs and 1 sugar each*

**They taste better the next day after being in the fridge**
Eat with some Natures Hollow sugar free preserves on top.
OK - can everybody Get up out of your seats and SAY *** 
O-M-G!!! SO GOOD! 
Chocolate Cheesecake
Here I made some in Chocolate flavor by using 2 tb of cocoa and maple extract to the filling, and 4 Hershey's unsweetened chocolate chips to the top. This one tastes great with Nature's Hollow on top too.

A Single low carb bun or bread.

Ingredients:

1 tb of almond and coconut flour
pinch of salt 
1/4 t baking pwdr
1 tb of chia seeds
1 egg
1 tb of butter or coconut oil.

mix together and place on parchment paper in 2 piles and spread out.

before going into the oven

Bake in the oven for 10 min at 350. 

Use 1 piece for the top and 1 piece for the bottom of a bun or sandwich.
Here I made into 1 piece and made it a pizza

Almond flour minute Muffin
The best so far.
Ingredients:

1 egg
1 truvia
1/2 t baking pwdr
3 tbsp of Almond flour
a little bit maybe - 1 tbsp of sugar free Natures hollow maple syrup, 
1 t butter

Then add;  some maple extract, cinnamon, chopped walnuts, hershey's sugar free chocolate chips

I use a large mug and mix real good and place in microwave for 1 min, check and the 30 seconds more

turn upside down on a plate.

Coconut flour 2 minute Muffin
Chocolate
Ingredients:

1 egg
1 truvia
1/2 t baking pwdr
1 tbsp of coconut flour
a little bit maybe - 1 tbsp of sugar free Natures hollow maple syrup, 
and a little sugar free almond milk as needed
1 t of coconut oil or butter


Mix-Mix-Mix with a fork and get all the lumps out.

then the flavor - 
for chocolate: a little bit of maple extract and 1 tb of unsweetened of cocoa pwdr, and a handful of sugar free hersheys chocolate chips and a few crushed walnuts if you want.

for vanilla; a little vanilla extract, cinnamon, and of course the sugar free chocolate chips.

be careful cause it rises fast so put it in a real big mug 

cook bet 1-2 min until firm 

serve w/RediWhip of course. :-)

Pumpkin pancakes

Flaxseed Minute Muffin; By: Carey
It looks like this when you get it out of the mug.
 You make it like the pancakes, 
but w/1 egg, 3 tb of Flaxseed, 1/2t baking powder, a little Unsweetened almond milk and what ever you want - a spoon of coconut oil,  cinnamon, truvia, vanilla, cocoa, a spoon of peanut butter, walnuts, berries - whatever and microwave in a mug coated for 1 min or more.
you can cut it in half and put cream cheese but it tastes way better w/Nature's Hollow on top

Flaxseed Pancakes
Ingredients:
2 eggs
about 5-6 tbsp of ground flaxseed, cinnamon, 1 truvia, little baking powder, vanilla 
unsweetened vanilla Almond Milk (enough to make it the right consistency).

My batch made 4 and I put cream cheese and natures hollow on top. I had every intention of eating all 4 cause I was hungry, But I could only eat 2

Almond and Flaxseed pancakes

I love the way Almond flour pancakes (but they are a bit heavy) and the Flaxseed ones (more fluffy), so I decided to mix the 2.
Ingredients:
1/4 cup of almond flour
1/4 cup of ground flaxseed
1 tb of coconut flour
2 eggs
1/2 t of baking pwdr
1 truvia *if you want*
cinnamon
a bit of vanilla
and unsweetened almond milk (enough to make it the proper consistency).


I think they were great!! I love the way they came out. You need to try it.

Almond flour pancakes


Ingredients
1 cup almond flour
2 large eggs
1/4cup water, or unsweetened Almond milk
2 tablespoons extra virgin olive oil
1/4 tsp. salt
1 tsp. baking powder
1 tsp truvia or stevia sweetener
dash of Cinnamon

Directions
Mix well and cook like regular pancakes. I use Pam to cook them in a skillet.

The whole batch; (but don't eat the whole batch)
Sugar- 4, Carbs- 24, Fiber- 12

Coconut Flour Pancakes

Ingredients:

1 Cup unsweetened Almond Milk 

4 Eggs

1 tsp Vanilla Extract
1/2 Cup Coconut Flour (sift)
1 tsp Truvia 
1/2 tsp Baking Powder
1tbsp of Braggs apple cider vinegar

Sugar-3 / Carbs-29 / Fiber-25  the whole batch

if you split the batch up into 3 servings, it is Sugar-1 / Fiber-8 / Carbs-10 grams

Heat your griddle or waffle maker. Mix the eggs and other liquids together, then add dry ingredients. I prefer them with butter or cream cheese Nature's Hollow Preserves.

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
