OH-what was I waiting for?? Is all I have to say. They were surprisingly good considering the ingredients. Way in the back of your mouth you can taste a little bit of the pork rind flavor and that is what makes it so good.
1 cup crushed pork rind
2 tbsp chia seeds
1/4 cup unsweetened vanilla almond milk
3 packages SweetLeaf stevia
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
1. Crush pork rinds (I used my food processor) and set aside.
2. Beat eggs and then fold in milk, Stevia, cinnamon, vanilla and chia seeds.
3. Add crushed pork rinds and let the mixture sit for 5 minutes.
*I had to add a little more milk to make it the right consistency*
4. Meanwhile heat skillet with coconut oil spray and then fry mixture pancake style.
