Pork Rind Pancakes

So I saw this recipe many times quite a while ago and while I was at the Wal-Mart grocery store the other day, I saw this awesome pack of pork rinds and bought them and decided to finally make them.

OH-what was I waiting for?? Is all I have to say. They were surprisingly good considering the ingredients. Way in the back of your mouth you can taste a little bit of the pork rind flavor and that is what makes it so good.

1 cup crushed pork rind
2 tbsp chia seeds
2 eggs
1/4 cup unsweetened vanilla almond milk
3 packages SweetLeaf stevia
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract

1. Crush pork rinds (I used my food processor) and set aside.
2. Beat eggs and then fold in milk, Stevia, cinnamon, vanilla and chia seeds.
3. Add crushed pork rinds and let the mixture sit for 5 minutes.
*I had to add a little more milk to make it the right consistency*
4. Meanwhile heat skillet with coconut oil spray and then fry mixture pancake style.
Mine made 6 from the batch.
5. Serve with low Nature's Hollow sugar free maple syrup.

  1. Those pancakes look interesting. I was looking through your recipes and thought your 2min pumpkin muffin recipe was for pancakes so I started making them and realized it was a muffin recipe (I mustve been tired). I added extra coconut milk to turn the muffin into pancakes and they turned out fabulous! I think I will have them again tomorrow, as pumpkin is so great for the skin and the body.
Enjoy the cooler weather (or atleast it's cooler down here at the beach!)

  2. That just sounds so weird! I loved pork rinds when I was younger so maybe I would still have that acquired taste! You are one creative cooker!

  3. I like spicy pork rinds and would use them to coat chicken, pork chops, etc. but can't put it in a pancake! Did you add the pork rinds for flavor or binding?

    1. I followed the recipe I found. It's instead of flour - and believe it or not, It WORKS. Try it and let me know what YOU think too...

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.

I hope this helps.
