Good Morning Friends,
I am feeling a bit better this morning, only coughing up a lung or two not all my guts anymore. Its going to be a beautiful day over here. I just got off a video call with my daughter and her new beautiful baby. I told her to mount a camera over her bed so I could just stare at Chloe all day. She is adorable.
So I had some pumpkin puree in a container left in the fridge and made some pancakes this morning. I did it a bit different and they were so goo that Hubby who came home this morning from working the night shift woke back up from the smell. LOL
This is how many my batch made and YUP - I actually ate 4 of the smallest ones. I couldn't decide if I wanted syrup or coconut butter so I brought out both. It turned out that If I put a tiny bit of the coconut butter on each bit then dipped it in the syrup it was AWESOME!!
Ingredients:
2 oz of cream cheese ( I softened in the microwave for 20 sec)
2 eggs
1/4 c of pumpkin puree
unsweetened vanilla almond milk (enough to make the right consistency)
1 tbsp chia seeds
1tsp baking powder
some vanilla extract
8 drops of vanilla stevia drops
2 shakes of each spice;
cinnamon, ginger, allspice, ground cloves and pumpkin pie spice
1/4 c of almond flour
2 tbsp of coconut four
Directions:
mix the wet ingredients first then add the dry.
Cook on your grill or in a pan on med heat a little slow to make sure they cook all the way thru.
I use coconut oil spray on my pan first.
The whole batch has 3 sugars and 24 carbs
That's not including what you put on top of it. :-)

How to convert Sugar to Stevia

Some tips if you are having trouble
- First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
- Track all of your sugar/carbs. Add everything from your meal together and count them that way.
- Try to stop eating whole grain carbs after 3pm.
- Make sure you drink lots of water.
- Count everything that you put into your mouth. Even sauces - everything , check labels.
- Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
- Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
- Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
