Mini Lemon Muffins and Turkey Chili today...

Hello Friends,

Well I feel like I was busy today but didn't get to do some of the stuff I wanted to. I intended on vacuuming and mopping but didn't.
I started my day with breakfast of course, and today I felt like Pancakes.
And of course I have some left over for tomorrow or the next day.
So I decided that my toaster oven is EVIL or possessed!! This is the back of my fore-arm and must be like the 20th time I have burned either my hands or arms on it. My stupid ET's.

I went to Chino Hills to run some errands this morning and by the time I got home it was 1pm and I was hungry. I put my stuff away, threw in a load of laundry then made lunch.
This was some left over chicken cut up, 1/2 avocado, 2 tiny tomatoes, goat cheese and mayo and a smart and delicious wheat tortilla w/cheese.

After I had a nice Video chat with my new friend Linda.

So lately I have been wanting to make another batch of those delicious Lemon Cookies. Today while I was out I stopped into Cost Plus-World Market I picked up some new Decaf Tea that looked good.
I bought this Mini cupcake pan and made the lemon cookies and added 1 extra egg and made them into mini cupcakes. The batch made 23.


 I made some frosting to put on top out of Cream cheese, vanilla extract, and stevia drops. I added a couple drops at a time and kept tasting until it was just right. I used 1/3 pkg of cream cheese and about 7 drops of stevia.
I had to taste one right away of course to make sure it was good. LOL

Next was dinner. I made a batch of turkey chili.

 I used 2.5 lbs of ground turkey, 1/4 of and onion cut up, garlic, 2 celery stalks cut up, 1/2 of a big zucchini, and the stuff you see in the picture above. Green chilies, great northern white beans, alfredo sauce and tomatoes.
It came out real good and there's lots left.  I only used 1 small can of each tomatoes and beans so there wouldn't be that much sugar or carbs.

Desert was 1 more mini muffin and some RediWhip in a bowl. I could have ate more of them but there is always tomorrow.

OK my tummy is very happy right now so I will say good night for now.

  2. I have been eating a lot of pancakes lately. I make the cream cheese, egg, and protein powder kind. Very filling! I have that same mini cupcake pan - it makes the perfect two bite sized mini muffin.

  4. Soooo...how did the extra egg change the cookie recipe? Did you add anything else besides the extra egg??

    1. Nope just the 1 extra egg because I was making them into muffins so I wanted them to be more like a muffin and not like a cookie. They came out good.

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
