I am gonna try to make this kind of short. Yesterday my breakfast;
2 scrambled eggs with baby spinach and cheese, 1/2 avocado, berries and a cheesecake muffin in honor of National cheesecake day. By the was I froze some of them and just took it out and defrosted in microwave on defrost setting and it was perfect.
I went outside to cut and weed-eat the front and back grass (might be my last time here anyways). Hubby kept telling me to not bother because we are gonna move soon. I said I have to - it's our responsibility to keep it looking nice. He doesn't get it I guess. That was over 2 hours of yard work.
I came in rested then made lunch;
I made a zucchini crust pizza - you make it the same way as a cauliflower crust. I put some pasta sauce, cheese, left over chicken and of course jalapenos. I also had a chocolaty treat after.
I was sitting here and it was after 2pm and I decided to start studying for my 5th and final Real Estate online class. I figured if we DO move this next week I might not have time for a while and I might forget what I have learned in the other 4 classes. You know I got Middle-Heimers bad. LOL
I studied until 5:30 and then took my 2 favorite frurry girls for a walk. Came back and studied some more.
Then made some broccoli in the micro and some wings under the broiler. I ate them while studying some more. Hubby came home went for his run and took all his stuff upstairs and left me alone. Nice guy.
So finally after almost 7 hours of studying (when it is only supposed to take 3) I was ready to take the big Exam around 9:45pm. You only get 20 minutes remember? And the first time I flunked - twice. This time I took notes on a pad along the way - I have always been told that if you take notes you can retain stuff better. I finished by 10:05pm and PASSED!!
I am so glad to get that done and I am proud of myself for doing that hard stuff when I DID NOT want to...
We were supposed to hear that we were approved for our loan yesterday but no call. From all the experience of trying to get this loan - that is not a good sign.
BTW - my weight is still up a few lbs today.
Breakfast this morning;
My tummy is doing Pumpkin jumping jacks - this was so good!!
I made a pumpkin muffin and added 1 tb of almond flour to the 1 tb of coconut flour and made some of that coconut butter-real butter-cinnamon-stevia mixture in the microwave and put it o top. No nuts or chocolate chips this time. with some berries of course. Yum.
So I am typing this and hubby is at work and said he got a call that the loan was approved and we should get our loan docs this morning. Wow I can't believe it - We were both starting to think that we are not meant to get the house at all. What do you know..........
I am might not be able to post as often but I will try the next week or so.

ReplyDeleteI am so happy for you!!! Those few lbs will be gone by the time your move is over. The stress of waiting probably is responsible for some of them! Yay!!!!

ReplyDeleteYay on the exam!!! I will have to give the zucchini crust pizza a try....might be easier/faster to make than the cauliflower? I've also found a pizza recipe that is made out of cheese and the Hubs absolutely loves it...very filling!
