How I Fix a Cauliflower Crust Pizza...

Hello Friends,

Somehow, Someway, I managed to keep it together in the midst of my complete breakdown. Found out today that we were told no again. I was so upset that I was lied to and avoided all weekend. They knew since Thursday. Customer service is so important and if they were my employees I would fire them. I was so hurt and then upset I cried for over an hour. Hubby tried to do his best to comfort and reassure me, but I was inconsolable.

This BFC thing  really - Really is kind of like hypnosis, its all in your head.

I am so glad that I have learned to control myself now because before BFC I would have eaten everything in sight. I did feel like opening a bottle of wine and just drinking until it was gone - but I didn't. I walked with the dogs - it was HOT! While I was out the lady from the seller's office called and I told her what happened. We discussed some options and the lender is trying a few other things. We are not all the way out and Hubby says he will get me the house and not to worry - but I feel like its over.

What ever will be Will be.

To me Breakfast is the MOST important meal!! I don't care what anyone says. I stop eating at 7ish and then don't eat until 8am the next morning. That's 13 hours with no food. Think about that will you the next time you are thinking about trying Jorge's crazy new menu with no breakfast. You have to regulate you system so you won't start storing the fat.

My food today;
 Breakfast was scrambled eggs w/mushrooms, onion, baby spinach, cheese - oasis toast w/butter and peanut butter, 1/2 avocado and some berries
 Lunch was a carb chopper tortilla w/cheese, chicken, baby spinach and horseradish mayo and a orange Zevia.

snack was 2 squares of 86% dark chocolate

Dinner tonight and last night was a cauliflower crust pizza and some chia seed pudding for desert.

Like some of you I used to have a problem getting my cauliflower crust crispy. It took me a while to figure this out. This is how I cook mine:

  • I take a fresh head of cauliflower and boil it in water for about 5 minutes
  • remove from heat and drain water and let cool
  • shred in my food processor and store the leftovers in a covered bowl in the fridge
  • make my crust - I just kind of eyeball everything - 1/2 - 1 cup of cauliflower, 1 egg, different cheeses to add up to 1/2 cup, garlic (fresh or powder), red pepper, chopped jalapenos (if you like it spicy), and some italian seasoning.
  • shape it on a Silpat or if you don't have one of those use parchment paper either of them on top of a cookie sheet
  • bake at 410 for about 15-20 minutes
  • transfer from silpat or parchment paper to nonstick foil
  • add you sauce, cheese and toppings
  • broil for 5 more minutes until top gets brown.

  2. I'm also sorry the house thing didn't work out. They should have just told you from the beginning. Maybe there is a better deal or a different house out there waiting for you and that's why this one didn't work out. You ate so good in spite of it all, you're such a good role model for the rest of us! Sending hugs and well wishes your way!

  6. I'm sorry, too! It really sucks that these people were too chicken to call you and let you know about the mortgage! Try to remember that everything works out for a reason and everything works out in the end. Sounds cliche, but it really does :)

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
