I have been kind of bored the past couple days. Trying to just stay home and not go out and spend money. You all know what I mean. I have been going for my daily walks with my 2 dogs, but actually had to put on a sweater cause its been around 60 ish. For us over here that's kind of cold. LOL
Yesterday I made some chili. It was very good and hubby loved it so much, he took some with him to work today too.
this is what I put in it:
2 lbs of ground turkey
small yellow onion
4 cloves of garlic
2 small serano peppers
3 stalks of celery
1 zuchinni cut up
4 mushrooms cut up
2 small cans of green chilis (no sugar)
2 cans of white northern beans (no sugar)
1/3 jar of seeds of change - romagna 3 cheese pasta sauce
chili powder
cumin
chicken bullion and water (I had no chicken broth)
I cooked it all up and let it simmer for a couple hours to let the flavors mingle.
I also steamed a head of cauliflower and shredded it in my food processor.
I put about 1/2 cup of the cauliflower in the bottom of the bowl with about 1 cup of chili.
I figure it is about 2 sugars and 1 carb per bowl. Or 1 sugar w/o the cauliflower.
It was very good - but I did feel a bit guilty eating the beans at night for dinner. I usually only eat meat and veggies for dinner. But I guess not too guilty cause I ate it again for lunch today. and 1 square of 86% chocolate after. YUM.
This is my dinner tonight:
Blackened salmon and 8 spears of asparagus. I got them both at Sam's club. The fish comes frozen and already spicy like that. I just make a foil pouch and put the fish and asparagus inside with some lemon juice and butter, put it on a pan and bake at 350 for 45 minutes. Its so easy you don't have to do much at all and you have a great meal.
BTW - the fish was very spicy and good. I love having fish but hubby doesn't really care for it so I have it when I am by myself. He said he wanted to come home and have more chili - so...
I just want to say how much I love and appreciate all the comments that you always leave for me. We are all so different and from different places, but have the same thing in common too.
We all want to be healthy by losing weight. We can accomplish that by helping and supporting each other.

I would love to have 60 degrees! It was cold again today, but the sun was shining so that makes it better. I am such a weird eater compared to everyone else. I'm lucky that I am healthy:)Oh at least I think so!
ReplyDeleteMy husband would love the blackened salmon. That's another one of those things that seems expensive in the store, but you think nothing of paying 3x that at a restaurant for 1 serving.
Thanks for keeping us motivated! Are you still on a Jorge high? I would still love to know if he really talked to everyone or was just kind of there. Like did he engage you? Ask you questions about what worked for you? Just curious!
Kay he did talk to us just a bit, but that part was mostly in the interview for the video. There was us 6 plus his crew of 4 plus he had a couple friends there. So - busy.

Thanks for sharing another great recipe. I love a 'pot' of soup/chili. It's just so homey and satisfying. I have a roasted chicken in the fridge that needs to be made into soup. I bet I could season it up like your chili-and have some chicken chili...I'm inspired.

I love Salmon too Rosale. I never bought it frozen like that, but I will try it. I love chili too. Good idea with the cauliflower. Sorry you are bored. I wish to be bored for awhile. But if I was, then I would wish to be busy. Why is there no happy medium???. It's 60 here too and we are set for real cold weather later in the week ( below 30). Now that is cold! I saw a picture in a magazine the other day of Jennifer Aniston in LA going to a movie. She had on a coat and a scarf. It made me smile because it was LA. Now how cold could it be? Big hugs from me in cold Pennsylvania to you in warm, California!
ReplyDeleteYour chili sounds yummy. I really need to get a food processor so I can shred stuff. I just have a 20 year old glass blender right now. My old one broke so I am borrowing my hubby's moms old one. Ah well....maybe Santa will bring me a blender??
ReplyDeleteThe chili looks and sounds great! It's funny because I was bored outta my mind this weekend, too, and we only live 45 mins away from ea. other. I stay in because I don't want to spend money and my 9 yr old wants to play sports outside with his buddies. His sister, my babysitter, was at baton competitions all weekend so I couldn't leave the house (oh and my hubs was working on our rental property in Lake Elsinore)! I can't wait til the kid can stay home alone (although, that might cause me to go shopping!) Anyhow, I promise we will get together soon!
