Today is monday and I had a pretty boring day. It's hard to find something to do when you can't spend money. So I just stayed home. I painted my toes and my fingers. This is the first time in forever doing my hands by myself. Well since I found out about the Essential Tremors that I have. I have to tell you it was kind of funny in a way. Trying to find a way to keep my hands still while I did it. Well I think I did OK. Here is the picture.

OK so I posted below what I ate the past 2 days. I have to share this dip that I made. It was SOOOO GOOD, it puts spinach atrichoke dip to shame.

Dubliner Artichoke Dip
12 oz. artichoke hearts, chopped
1 cup mayo
1 small clove garlic, minced
2 tbsp oregano
2 tbsp grated onion (I actually forgot this-duh)
2 cups Dubliner cheese grated (I bought the brand Kerrygold 7oz. pkg at Henry's Market)
Combine all ingredients and spoon the mixture into an 8 inch baking dish.
Bake for 30 min at 300 degrees. Serve with celery for the BFC or approved crackers, pita bread. .

breakfast; 2 zuchinni pancakes, 2 turkey bacon, 2 oasis toast w/ butter and josephs sugar free peanut butter, a few berries, coffee. S-3/C-1
lunch; some turkey and turkey pastrami wrapped around string cheese, I went to the movies and ate popcorn. S-0/C-2
dinner; meatballs, green beans, alfredo sauce, 2 squares of Lindt 85% w/rediwhip. S-5 1/2 / C-0
Monday I ate:
breakfast; 2 eggs w/cheese, mushrooms, baby spinach, 2 turkey bacon, 2 oasis toast w/butter and josephs sugar free peanut butter on one and natures hollow sugar free preserves on the other, 5 raspberries and some blueberries, coffee, blah, blah, blah. S-5/C-1
lunch; spinach salad w/tuna, mayo, feta cheese, bacon bits, 1/2 avocado, croutons. S-1/C-1
snack; pork rinds 0/0
dinner; salmon patty, and Dubliner Artichoke Dip (on recipe page), and celery for the dip. By the way - That dip was THE BOMB!!!! and I will have some clemmys for desert. S-1/C-2
I am getting ready to go for my nightly walk now, so I ttyl.

I have never tasted an artichoke:) I just know I wouldn't like them. Sad huh? I also have never tried the spinach dip although I see it all the time. I am a weird girl.

I would love to try that dip! Unfortunately, I would be the only one to eat it at my house, though, so I'm not sure I can take that kind of temptation. LOL

You are like the energizer bunny. You keep going and going and going. I have a question. Is there another cheese that can be used for your dip besides the Dubliner? We don't have a Costco here. I have looked other places but can't find this type of cheese. You had mentioned in another blog that you HAVE to be on a diet for the rest of your life. I wanted to say that it's because of you and the lists of what you eat each day and your wonderful videos that have given me the encouragement that I can actually do this. With food ideas like you give, it's like not even being on a diet at all. Thanks for all that you do for all of us Rosy. You truly are an inspiration.

The dip recipes sounds really appetizing, perfect for a potluck! This will be what I will take to my next BBQ. Thanks for all your suggestions and encouragements! Have a great day!
ReplyDeleteHey Rosalie, the coconut bread is kind of a cross between bread and cake - more like pound cake, I guess. You can use it for a sandwich if you want, but it is slightly crumbly, so you have to be careful.
