Good Morning Friends,
Wow I DO look forward to the weekends now. Before all the days seemed the same when I didn't work. I have been on a waffle binge this whole week. It is just as easy and the same as making a muffin, but in a waffle maker instead. I think I like the texture much better.
This morning I made some cashew butter. When I buy nuts now, I always buy them RAW from the bins at Sprouts when I go there, and store them in ziplock baggies in the freezer. They stay fresh that way.
I put some frozen - RAW cashews on a cookie sheet and placed them in the oven at 300 degrees and asked Hubby to watch them and flip and shake them every 5 min until they are done while I took a quick shower.
He comes in after 5 or so minutes and says "how do I know if they are done?" I said you can tell, they start to smell real good and DON'T let them burn please.
So when I was done, they were perfect and I put them in the food processor and added about 12 drops of vanilla stevia and a dash of sea salt and about 1 tbsp of macadamia nut oil to soften.
Last night Hubby and I went to this restaurant called The Heights and had some Pinot Noir wine and a spinach-cheese appetizer, (I had about 5 chips), and I had a Thai salad. It came with noodles that I pulled off and asked for the sesame-nut dressing on the side so I could drizzle it on. It was so good. And a few bites of a chocolate desert which he ate most of.
Well I gotta go. Got lost of stuff to do today. I wish you all a GREAT Easter weekend. And NO candy for you... Just the kids. LOL

Some tips if you are having trouble
- First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
- Track all of your sugar/carbs. Add everything from your meal together and count them that way.
- Try to stop eating whole grain carbs after 3pm.
- Make sure you drink lots of water.
- Count everything that you put into your mouth. Even sauces - everything , check labels.
- Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
- Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
- Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
