HomeMade Muffins, Chili and Peanut Butter today...

Hello Friends,

I had a nice Monday today. Hubby was home for once and we ate lunch today at Chipotles - my favorite place and we looked at a couple houses, just in case the Short Sale doesn't go thru. Its always fun looking. You know how long those take.

Yesterday's after my breakfast I went to my 3 stores, Sam's Club, then Sprouts, then Target then home.

For lunch I ate 1 of Maria's homemade Tamales with a little sour cream, salsa and cheese on top and a spinach salad.
Then I made some Chocolate-CheeseCake-Muffins. They smelled the house up so nice while they baked.
 I made a pot of Turkey Chili for dinner. I put 1 pkg 2.5 lbs of turkey, some cut up; onion, celery, zucchini, 1 small can of tomatos and small can of white northern beans, spices; cumin, chili powder, red pepper and fresh garlic.
 This was so good I ate 1 and 1/2 bowls and of course a CheeseCake muffin with Natures Hollow Preserves on top for dessert.

Breakfast this morning was 2 Oasis toast with butter and peanut butter on top, 1/2 avocado 2 eggs and berries.
I roasted the peanuts this morning before we left to look at the houses and made some delicious HomeMade Peanut butter when I got back.
I added some Almond oil-just a bit to soften it up and 8 drops of Vanilla Creme stevia drops. It came out so good even hubby liked it when I forced him to taste it. It's in the fridge and I can't wait to have some in the morning.

I LOVE being Healthy and learning how to make all my own stuff now. It is so fun especially when it comes out tasting so GOOD!!
Mine and Hubby's dinner I just took out of the oven is Trout with some lemon and butter on top and 8 asparagus each and I sprinkled some parmesan cheese on top before cooking.

You know I'm gonna have another muffin for dessert.

  1. yes eating healthy is fun! its also fun because I get to shop at many different grocery stores becausde the deals on some healthy foods are much better at other places! i love love trader joes and target! whole foods is too expensive for me now that I found trader joes..I wish there was a sprouts here :/

  2. Sounds like you had a good day! I've only made the almond butter and your chocolate hazelnut butter so far. I've promised my dad some homemade peanut butter so I'm going to try that next.

  3. Sounds yummy! I still haven't cracked open my coconut oil. I am so weird!!!

  4. I am planning a US shopping trip in March. I know there is a Chipotles there. You experts will have to tell me what to have and I'll go for lunch. YUM! Hey, we're having fish tonight too ;)

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
