So today I was not feeling that well but knew at lunchtime I would be hungry, so I steamed and shredded the head of cauliflower I bought the other day.
I place the cauliflower in a pot of cold water and let it get to a boil for only a few minutes. Not mushey-just cooked a little.
Drain all the water and let it cool - then shred in my food processor.
I did not want to make anything in the oven because it is 100 outside today so I improvised. These are just like my Cauliflower-cheese-jalapeno-muffins
Makes 4 - serves 2
Ingredients:
1 cup of shredded cauliflower.
2 eggs
garlic-fresh chopped
1/2 cup of shredded cheese
jalapenos cut up
bacon bits
2 tbsp of coconut flour
some Italian spices and Red pepper
Mix all together in a bowl.
Then I formed 4 pancakes with my hands on my griddle while it was cold.
Turned it on to temp between 250-300 and let it brown slowly on one side then flipped to brown the other side.
As you see from the picture above I put some spicy hummus, tomato, and avocado on top and ate them like tortillas and folded in half.
Very GOOD... ENJOY...

OK, so when my Mom used to make cauliflower the whole house would reek? Does it? Can you really not taste it? I don't know....I am so impressed with your ability to adapt:) It was cooler here today and kind of nice actually. I love the sun, but not too hot.
