Avocado Chocolate Frosting

I've seen the use of avocado and chocolate many times on different sites and blogs and tried it once but did not like it too much.
I have 3 avocados getting too ripe and decided to make a chocolate frosting to put on the new Cashew-butter-bread I made earlier.
I brought it to Hubby to taste with his finger and he kept saying it is not sweet enough, so I added in more stevia drops and tried again. He still did not like it and said it tasted salty - so I told him it was avocados and I almost GAGGED him. LOL
He said its WHAT?? He does not like a lot of the stuff I eat. My taste buds are different now.

I think I got it to taste pretty good, you try it and let me know by commenting.

Ingredients:

1 perfectly ripe avocado
1/4 cup good unsweetened cocoa powder
1/4 cup Nature's Hollow sugar free maple syrup
15-20 drops of Vanilla Creme SweetLeaf Stevia drops (taste)

Instructions:

Place all three ingredients in a food processor and mix together, stopping to scrape down the sides once or twice.

The frosting is ready to spread immediately but you can refrigerate if you think it needs to firm up. Add a little water if it is too thick.

Makes enough frosting for one single layer cake or use it on some of my cookies from the recipe page or the Cashew Butter Bread above. Store in Fridge - of course.

ENJOY!

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.

I hope this helps.
