2 large eggs
1/2 cup unsweetened almond milk
3 tbsp melted butter or coconut oil
1 tsp apple cider vinegar
3/4 c of raw cashews
1/4 c of sifted coconut flour
2 tbsp flaxseed meal
2 tsp baking powder
1/4 tsp baking soda
1/4 teaspoon sea salt
3 -1/8 tsp or 3 pks of powdered stevia (I use Sweetleaf)
Instructions:
Place cashews in Food Processor and grind up.
add in all the other dry ingredients
melt coconut oil and milk in a glass bowl in the microwave
add all the wet ingredients and blend well
Put the batter into heated waffle iron I spray with coconut oil first .
Mine made 5 waffles.
I stored the extra ones in a large zip lock baggie with parchment paper in between in the freezer.
Then just pop them in the toaster oven to reheat .
Each waffle has - C/16 - F/4 - S/<1

Oh goodie! I was looking for a low carb waffle recipe as the last low carb waffles I made stuck to the waffle iron and came out in a zillion pieces! I had coated the waffle iron with melted coconut oil - what do you use to keep the waffles from sticking? Thanks!
