Chocolate-Pumpkin-CheeseCake Muffins


Ingredients: 
for chocolate cake part

1/2 cup coconut oil
6 Eggs
1 teaspoon vanilla extract
1/2 cup pumpkin puree
1/4 cup Natures Hollow Maple Syrup

6 pks SweetLeaf powdered Stevia
1/4 cup Unsweetened cocoa
1/2 tsp Sea salt
1/2 cup coconut flour (sifted)
1/4 tsp baking soda

Directions:

Preheat oven to 350.

Mix the eggs and other wet ingredients in one bowl. I use my food processor - its easier.

Mix the dry ingredients together in another bowl.

Combine the wet and dry mixture together until well blended.

Spray your muffin pan with Coconut Oil Spray and fill all 12 cups evenly.
Place 4 Hershey's sugar free chocolate chips on each one and make a little well in each muffin.
Next Step - the CheeseCake Part:

1 8oz pkg cream cheese
1 egg
1/2 tsp vanilla extract
2.5 tsp Xylitol

microwave cream cheese for 30-40 seconds to soften
mix all ingredients together till smooth. Carefully pour by spoonfuls into the wells of the pumpkin muffins.
Bake at 350 for 25 minutes or until firm.
Let cool and store in the fridge.

They should have aprox. 1g sugar and 10g carbs each

My second question, is In the belly fat book Jorge has a brownie recipe and it calls for flour but, he doesn't say what kind do you know if using regular baking flour is ok? Thank you for any help you can give me.

    1. I'm not sure where you live but I buy the syrup at Sprouts market.
      Which book was the recipe and what page and I will look it up for you.

    2. Ahhh thank you so much.....Its the Belly Fat Cure (Original) page 213. I live in Georgia, and don't have a Sprouts by me...Ill have to check on the North side of town and see if they do......Thank you so much for replying back to me

    3. Yeah that flour looks like regular flour and I would not make those. White flour is not healthy. use one of the recipe on my recipe page. Also there is a website that has low shipping for healthy stuff called:

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
