The papusas were Awesome...

Hello All,

Well it's been raining over here again and today it stopped and cold. You can see the snow on the mountain tops, beautiful.
So the papusas we awesome on Thursday for lunch. Some spinach and cheese and some chichirones (pork rinds) She also made us some guacamole with tomatillos in it and salsa too. I ate 2 they were so good.
 We hung out with her over there for a while then home for dinner. I made us some brussel sprouts, broccoli and chicken. A couple protein bites and rediwhip for desert for both of us.
 Breakfast for Maria and I yesterday (Friday) was chorizzo and eggs, avocado, 1 slice of coconut bread and berries.
 Our lunch was 1 left over papusa each and cottage cheese.

Maria insisted on helping me clean the house, so we changed the beds, did laundry, cleaned the bathrooms and vacuumed and mopped - oh yeah and I paid bills and balanced the checkbook, which is a job in itself at times.

I put some hazelnuts in the oven to bake and whipped up a batch of Chocolate-Hazelnut-butter. Love that stuff, so addicting!!

We talked Lisa into driving out here to Rancho Cucamonga from Pasadena to go to the cheap $5 movie with us and we saw Identity Thief. It was very funny - Loved it!! I did eat a little popcorn which I must stay away from for a little while. That makes twice this week for popcorn for me and although I never add the fattening butter, it still is a bit fattening. I feel guilty I guess.

After the movie we had Maria's stuff in the car so we put it in Lisa's car and they went home and I went home. It was pouring last night. Hubby was still working the night shift. When I got home I just ate some coconut bread with some chocolate hazelnut butter on top for my dinner. That combination was not that good. The chocolate tastes much better on toast.

My breakfast this morning was eggs scrambled with baby spinach and some cheese and salsa on top, 1 slice of toast with butter and chocolate hazelnut butter, and some black and blueberries.
So while I was at Anna's house for the papusas I saw how easy it was for her to make them so I got some masa flour and I am gonna make my own tortillas and papusas from now on. This is the brand that Maria and Anna both use.
 It tells you on the back how much to use to make tortillas - just add some warm water.
 1/4 c is one serving and makes 2 tortillas. I figure if I add a tbsp of chia seeds to the flour it will have 3g fiber each instead of 1g.
So no more buying tortillas from now on. If I can make my own nut butters, and treats I can do this.

  2. I wish someone would help me clean the house ;) I found this recipe for coconut flour tortillas (http://www.againstallgrain.com/2011/05/04/grain-free-tortillas/). I heard they are good so I may try them. We have SO much snow here (fell yesterday).

  3. Oh BTW, I saw Jorge's latest video for his newest book where he was making a spinach and mushroom quesadilla with feta cheese. He put TONS of Olive oil (way too much I think) and feta cheese. He kept saying it was 0/0 for the cheese...
    FYI - Feta, goat and cream cheeses (which I use all the time) all have sugar in them. I have no idea why he kept saying that????

I can't wait to see how your tortillas turn out...please let us know and also how long and what temp. you bake them at...I need the details because my cooking is not good! :) BTW, has Maria lost weight eating the BFC way? I guess she's not consistent with it because she isn't at your house permanently, yet, but just curious because she's been eating the Rosie way :)

    1. Maria eats whatever I do when she is here and never complains. But like you said she is not here very much. The package says to cook the tortillas on a griddle or pan with no oil for about a minute on each side one at a time. I will try in the morning for breakfast and post pictures. :-)

Some tips if you are having trouble

  • First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
  • Track all of your sugar/carbs. Add everything from your meal together and count them that way.
  • Try to stop eating whole grain carbs after 3pm.
  • Make sure you drink lots of water.
  • Count everything that you put into your mouth. Even sauces - everything , check labels.
  • Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
  • Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
  • Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
