OK I just made these cookies. The site (below) where I got the recipe said they are not super sweet (which they are not) but they are Super-SUPER DRY... She says they remind her of Pecan Sandies. I don't know if I would go that far, but they have potential.
I am getting very familiar with using coconut flour and this recipe calls for only 2 eggs but has the 1c of butter or oil. I don't think that's enough.
You are supposed to use 2 eggs for every 1/4 c of coconut flour. Maybe by adding more eggs they might not be so dry.
Someone else make them and let me know.
Ingredients:
3/4 cup coconut flour
1/4 cup almond flour
1 cup shredded unsweetened coconut
1/2 tsp cinnamon
1 tsp baking powder
1 cup softened butter or coconut oil (I used 1/2c of ea.)
15 drops of SweetLeaf SteviaClear Liquid Stevia
1 tsp vanilla
2 eggs
**I remember that 1 tbsp of Braggs apple cider vinegar will help keep it moist**
Directions:
Heat oven to 350 degrees.
Mix the dry ingredients together first - then add the wet ingredients.
Scoop them into 1 inch balls and place on a cookie sheet covered with parchment paper.
Since they are not too sweet - I mixed together a little cinnamon and 1 pkt of stevia and sprinkled on top of the cookies before baking.
Bake for 12-15 minutes until cooked through. store in fridge
My batch made 24 cookies
each cookie has 3g carbs and 0 sugar and 2 fiber

Some tips if you are having trouble
- First make sure that you are staying under the 15/6. 15 sugars and 6 servings of carbs for the whole day. Thats no more than 5 sugars and 2 servings of carbs per meal.
- Track all of your sugar/carbs. Add everything from your meal together and count them that way.
- Try to stop eating whole grain carbs after 3pm.
- Make sure you drink lots of water.
- Count everything that you put into your mouth. Even sauces - everything , check labels.
- Make sure that you don't eat any artificial sugars. Check labels, if it says sugar free - look in the ingredients, look for....sucralose, aspartame, saccharine in the ingredients. Those are BAD!
- Going #2 is a big problem when a lot of people start the BFC. I have solved that problem with Clear Benefiber in my morning coffee and a scoop of Super Seed w/water in the afternoon. (you can buy the super seed on Amazon.com it is the cheapest).
- Choose your carbs wisely. Try to pick the carbs that will give you the lowest count of carbs, sugar and calories and the most fiber.
