Pancakes and Scones...

Hi Everyone,

Well its raining over here now. I just got home and wanted to take the dogs for a walk - but not today I guess. I was even gonna see if I could jog some more. So I suppose that will have to wait until tomorrow.

For my breakfast this morning I made some pancakes a little different than usual. I have been seeing a few times how some make them with oatmeal and cottage cheese.So I made up my own version. 

2 eggs, 1/4 cup of rolled oats (raw), 1/4 cup of cottage cheese, 1 scoop vanilla protein powder, some USVAM.
 They were difficult to flip for me with my ET's so I started out with the tiny two sided pan Maria gave me - but it stuck a bit - see the little one, then I switched to my small fry pan and when I flipped it over I flipped it into another larger fry pan. I used Coconut oil spray in the pans.
 These were so good and had a much different texture and taste than the others I make. YUP I ate all 3. 2 Thumbs up from me.
Hubby got called into work today for OT again today so I had time to kill. Did a bunch of laundry and made these SCONES. They kind of look like Big Fat Cookies and tasted good, sweet and kind of dry like a scone - kind of.

Of course I managed to drop half of one on the floor because of my shakes. Oh well had to eat the other half. DRATS!

So I went to the bank then to the $5 movie theater near us. I went to see Wreck it Ralph by myself. I love cartoon movies and thought it was the perfect time since Hubby was working. I brought a bottle of water and some turkey pepperonis and a cheese in a baggie and ate some popcorn. I really have to stop doing that. I seem to eat popcorn like once a week lately. Well at least I don't eat a big meal first - so I guess that's OK, and never any butter.

I really want some of those cheesecake muffins and I have nothing but time alone - so I just might have to make some of those too today. As a matter of fact I am right now so I can have some for my breakfast.

  3. No grains for me but they look yummy :) We are going to take our boys to that movie - hope it's cute. Popcorn is pretty glycemic (producing insulin) so adding real butter would probably help (IMHO).

    1. The butter you get in a movie theater is Not good for you in any way!! I would never eat that - Way too fattening.
      The butter at I buy and eat at home is different.

    2. True! I wasn't thinking about it being Theatre popcorn :) Funny, movie popcorn used to be not bad cooked in coconut oil with real butter. Then they said "no good" and cooked it in transfat with fake margarine. Now it's a vegetable oil I think and probably fake butter topping. Too bad eh? My kids LOVE popcorn and I usually sneak a few but I have to stop at a few or I'm in trouble :)You might enjoy this outake from FatHead http://www.youtube.com/watch?v=MEaI_8pXW_c.

  5. I didn't know that you added the anonymous comment option back, otherwise I would've commented before! I don't know what happened to my google account and it wouldn't let me set a new one up so I couldn't comment :) Pancakes look great. If you go see Breaking Dawn 2, you'll have to let us know how it is. I can't wait to take my kids to see it. We usually don't go to the movies (too expensive so we wait until it comes out on redbox) but both kids like twilight and so do I. So hard to please a 10 yr old boy AND a 15 yr old girl at the movies.
