1/2 Cup Coconut Flour (sifted)
1 tsp Baking Powder
pinch of Salt
1/2 Cup Butter or Coconut Oil melted (I sill probably use the oil)
4 Eggs
3/4 Cup unsweetened almond milk
1/2 Cup (or more) Chopped Pepperoni Slices (or other meat pizza topping like sausage)
1/2 Cup (or more) Shredded Mozzarella
How To:
Mix together the oil, eggs and milk.
Sift together the Coconut Flour, salt and baking powder into the wet ingredients.
Fold in the pepperoni and cheese.
Pour into greased muffin tins (no need for liner).
They will rise a little, but not much, so fill accordingly.

Bake at 400 degrees for 20 minutes.

Hi, I have just started this journey and found your video yesterday which of course led me to your blog. Just wanted to say hi and let you know i am here, lol, Got a question about the pizza muffins. how many carbs and sugars are in these...they look yummy and wondered how many i could eat..lol
